firstly, in a large kadai heat 2 tbsp ghee and saute 1 tbsp ginger.
add 5 cashew and saute until it turns golden brown.
keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, 1 tsp chaat masala and 2 tbsp tamarind chutney.
saute on low flame until the spices turn aromatic.
now add 2 tomato, ½ tsp salt and saute for 2 minutes.
boil for 3 minutes or until tomatoes soften slightly.
further add 1 potato and saute well.
add 1 cup water and mix well.
cover and boil for 5 minutes or until the ghee separates.
further add 2 tbsp mint and 2 tbsp coriander. mix well.
tomato base for chaat is ready.
