firstly, in a large bowl take 3 cup wheat flour, ½ tsp salt and mix well.
adding water knead to a smooth and soft dough.
tuck the dough, and grease with 1 tsp oil.
cover and rest for 20 minutes.
after 20 minutes, of resting the dough, knead slightly.
pinch a ball sized dough and shape it.
dust with wheat flour and roll thin.
roll as thin as possible.
now spread 1 tbsp oil uniformly. spreading oil helps to get flaky roti.
top with prepared onion stuffing.
fold the 2 halves and then fold to a square. make sure to spread oil in between to get layers separate.
now shallow fry in hot oil, keeping the flame on medium.
flip over and fry both sides until both sides are cooked well.
cook until the roti turns golden brown and crisp from outside.
finally, cut half and enjoy aate ka nasta with green chutney.
