firstly, in a pan heat 2 tsp oil. add 1 tsp cumin, 2 tbsp sesame and saute until it turns aromatic.
add ½ onion, 1 tsp ginger garlic paste and saute well.
now add 1 carrot and saute for a minute or until carrot softens slightly.
further add ¼ tsp turmeric, 1 tsp chilli powder, ½ tsp coriander powder, ½ tsp garam masala and ½ tsp aamchur.
saute on low flame until the spices turn aromatic.
further, add 2 potato and mix well.
mix until the masala is well combined with aloo. keep aside.
take 1½ cup thin poha and rinse the poha. if you are using thick poha then make sure to soak until it softens.
transfer the rinsed poha into a large bowl and mash smooth.
further add prepared aloo masala, 2 cup wheat flour, ½ tsp salt and 2 tbsp coriander.
mix well making sure everything is well combined.
add water as required and start to knead the dough.
knead to a smooth and soft dough, pinch a ball sized dough.
dust with wheat flour and roll uniformly.
further, roll to a slightly thick thickness like paratha.
now on a hot tawa place the rolled paratha and cook for a minute.
furthermore, when the base is partly cooked, flip the aloo masala paratha.
also, spread ½ tsp oil / ghee and cook both sides.
finally, enjoy poha paratha with raita and pickle.
