firstly, in a bowl take ¾ cup maida, ¾ cup corn flour, ½ tsp turmeric, ½ tsp pepper powder and ½ tsp salt.
add water and prepare a smooth lump-free batter.
dip paneer cubes in batter and coat uniformly.
deep fry in hot oil, keeping the flame on medium.
fry until the paneer turns golden brown and crisp.
drain off the paneer and keep aside.
in a large wok, heat 2 tbsp oil. add 1 tsp cumin, ½ tsp fennel, pinch hing and few curry leaves. saute until the spices turn aromatic.
add 4 garlic, 1 inch ginger, ½ onion and saute until the onions turn translucent.
also, add ½ capsicum and saute slightly.
keeping the flame on low and add ¼ tsp turmeric, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp pepper powder and ½ tsp salt.
saute until the spices turn aromatic.
further, add 2 tbsp tomato sauce and cook on high flame. add 2 tbsp water and adjust the consistency of the sauce.
add in fried paneer and mix well coating sauce uniformly.
finally, add 2 tbsp coriander, lemon and enjoy crispy paneer pepper fry.
