- firstly, slit the 6 chilli and remove the seeds from them. 
- to prepare the stuffing, in a large bowl take 1 cup paneer. 
- add 2 tbsp onion, 1 chilli and 2 tbsp coriander. 
- also add ½ tsp cumin powder, ½ tsp chilli powder, ½ tsp aamchur and ¼ tsp salt. 
- mix well making sure everything is well combined. 
- now stuff the paneer stuffing into the chilli and keep it aside. 
- to prepare the curry base, in a pan heat 2 tbsp oil. 
- add 1 onion, 1 inch ginger and 4 cloves garlic. 
- saute on medium flame until the onions turn golden brown. 
- now add 2 tomato and saute well. 
- saute until the tomato turns soft and mushy. 
- cool completely and transfer to the mixer jar. 
- grind to smooth paste. keep aside. 
- in a large kadai heat 2 tbsp oil. fry the stuffed chilli until the blisters appear. 
- keep the fried chilli aside. 
- add 1 bay leaf, 3 pods cardamom, 1 tsp cumin. saute until the spices turn aromatic. 
- now keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ¼ tsp cumin powder, 1 tsp coriander powder. saute until the spices turn aromatic. 
- further, add the prepared gravy base and cook until the oil separates. 
- also, add ¼ cup curd and cook well. 
- now add 1½ cup water and 1 tsp salt. 
- mix well adjusting the consistency as required. 
- transfer the fried chilli and mix gently. 
- cover and simmer for 5 minutes or until the flavours are absorbed. 
- add ¼ tsp garam masala, 1 tsp kasuri methi and 2 tbsp coriander. mix well.
