firstly, slit the lauki randomly and stuff in 7 cloves garlic. make sure to take small lauki, as it will be easy to burn.
grease the lauki with oil and place it on the burner.
also, place 2 tomato and start to burn on medium flame.
keep flipping and burn on all the sides.
make sure to cook uniformly.
cool completely, and peel the skin.
cut and mash smooth. you can also use a chopper to mash the lauki. keep aside.
in a pan heat, 2 tbsp oil. add 1 tsp cumin, pinch hing and splutter the tempering.
add 1 onion, 1 tsp ginger garlic paste and saute until onion softens.
further add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp garam masala and ½ tsp salt.
saute on low flame until the spices turn aromatic.
also, add mashed lauki and tomato.
mix well making sure everything is well combined.
furthermore, add 2 tbsp coriander, 1 chilli and mix well.
