Ingredients

  • 4 tsp oil
  • 1 bay leaf
  • 1 tsp cumin / jeera
  • ¼ tsp methi / fenugreek
  • pinch hing / asafoetida
  • 2 chilli slit
  • 1 tsp ginger paste
  • 600 grams pumpkin / kaddu cubed
  • ¼ tsp turmeric
  • 1 tsp kashmiri red chilli powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • ¾ tsp salt
  • ½ cup water
  • 1 tsp jaggery
  • 1 tsp aamchur / dry mango powder
  • 2 tbsp coriander finely chopped

Instructions

  • firstly, in a large kadai heat 4 tsp oil and saute spices.
  • also, saute 2 chilli and 1 tsp ginger paste until it turns aromatic.
  • further, add 600 grams pumpkin and saute for 2 minutes.
  • additionally, add spice powder and ¾ tsp salt.
  • saute for 2 minutes until the spices are well combined.
  • add ¼ cup water, cover and cook for 10 minutes stirring in between.
  • cook until the pumpkin is cooked well.
  • now add 1 tsp jaggery, 1 tsp aamchur and ¼ cup water.mix well and cook until the pumpkin absorbs all the flavour.
  • finally, add coriander and enjoy kaddu ki sabzi with roti.
