Ingredients

  • 1 cup sweet corn
  • 2 tsp olive oil
  • 1 inch ginger grated
  • 3 cloves finely chopped
  • 2 chilli finely chopped
  • 2 tbsp onion finely chopped
  • ½ carrot finely chopped
  • ½ capsicum finely chopped
  • 3 tbsp sweet corn
  • 1 tsp salt
  • 5 cup water

Instructions

  • Firstly, in a blender, take 1 cup of sweet corn and grind it to a smooth paste. Keep aside.
  • In a large kadai, heat 2 tsp olive oil. Add 1 inch ginger, 3 cloves, 2 chilli and saute well.
  • Also, add 2 tbsp of onion and saute slightly.
  • Further add ½ carrot, ½ capsicum, 3 tbsp sweet corn and 1 tsp salt. Stir-fry till the vegetables turn crunchy.
  • Also, add sweet corn paste and cook well.
  • Pour in 5 cup water and mix well.
  • Boil for 5 minutes, making sure to take off the foam.
  • Add in corn flour slurry and cook till the soup thickens.
  • Now add 2 tbsp spring onion and mix well.
  • Finally, enjoy the Sweet Corn Soup Recipe piping hot.
