Firstly, in a blender, take 1 cup of sweet corn and grind it to a smooth paste. Keep aside.
In a large kadai, heat 2 tsp olive oil. Add 1 inch ginger, 3 cloves, 2 chilli and saute well.
Also, add 2 tbsp of onion and saute slightly.
Further add ½ carrot, ½ capsicum, 3 tbsp sweet corn and 1 tsp salt. Stir-fry till the vegetables turn crunchy.
Also, add sweet corn paste and cook well.
Pour in 5 cup water and mix well.
Boil for 5 minutes, making sure to take off the foam.
Add in corn flour slurry and cook till the soup thickens.
Now add 2 tbsp spring onion and mix well.
