firstly, in a large kadai heat 2 tsp olive oil. add 2 clove garlic, 1 inch ginger and 2 tbsp spring onion. saute slightly.
add ½ onion and saute until the onions shrink slightly.
further, add ¾ cup oats and saute for a minute. roasting oats prevent oats from turning sticky.
now add 2 cup mix vegetables, 4 cup water and ½ tsp salt.
mix and boil for 10 minutes or until the oats is cooked well.
add ½ tsp pepper powder, 1 tsp mixed herbs, ½ lemon and 2 tbsp spring onion. mix well.
finally, enjoy oats soup topped with more spring onions greens.
