Firstly, in a pan heat 2 tsp oil and roast 7 cloves garlic until it turns golden brown.
Add 1 cup peanut and roast until it turns crunchy.
Now add 2 tbsp dry coconut and few curry leaves.
Keeping the flame on low, roast until it turns golden brown.
Transfer to a plate and allow to cool completely.
In a pan take ½ cup coriander seeds, 2 tbsp cumin, 1 tbsp fennel, and ¼ cup sesame.
Roast on low flame until the spices turn aromatic.
Cool completely, and grind to a coarse powder.
Transfer the powder to a large bowl.
Add ¼ cup chilli powder, 1 tbsp turmeric, 2 tbsp aamchur, 1 tbsp garam masala, ¼ cup kasuri methi, 2 tbsp sesame, and 2 tbsp salt.
Mix well making sure everything is well combined.
You can use this sabji masala mix to prepare any dry sabzi or bharwa sabji.
Finally, store the Sabji Masala Recipe in an airtight container.
