In this video post, I have shown a simple bhindi recipe where I have tossed and stir-fried okra and added the sabzi masala as seasoning to finish the recipe. The addition of this spice mix not only helps with the taste and spiciness, it also helps to add texture and flavor to it. You can make this once and use it for weeks if not months. Therefore, I would highly recommend trying this recipe for your next dry or wet curry.

Furthermore, some more related and additional tips, suggestions, and variations to the sabji masala recipe. Firstly, in this recipe, I have used a range of whole spices for myriad reasons. But these are thoroughly dry roasted which not only helps with shelf life but also helps to bring out more flavor from individual herbs. Secondly, once the spices are roasted, I have grounded them to a medium coarse powder. Do not ground them to a fine powder as it would not bring the texture to the curry. Lastly, the spice mix lasts long for a couple of weeks if not for months. However, for longer shelf life, it needs to be stored in a dry jar or refrigerated.

Ingredients
  

  • 2 tsp oil
  • 7 cloves garlic
  • 1 cup peanut
  • 2 tbsp dry coconut
  • few curry leaves
  • ½ cup coriander seeds
  • 2 tbsp cumin
  • 1 tbsp fennel
  • ¼ cup sesame
  • ¼ cup chilli powder
  • 1 tbsp turmeric
  • 2 tbsp aamchur
  • 1 tbsp garam masala
  • ¼ cup kasuri methi
  • 2 tbsp sesame
  • 2 tbsp salt

Instructions
 

  • Firstly, in a pan heat 2 tsp oil and roast 7 cloves garlic until it turns golden brown.
  • Add 1 cup peanut and roast until it turns crunchy.
  • Now add 2 tbsp dry coconut and few curry leaves.
  • Keeping the flame on low, roast until it turns golden brown.
  • Transfer to a plate and allow to cool completely.
  • In a pan take ½ cup coriander seeds, 2 tbsp cumin, 1 tbsp fennel, and ¼ cup sesame.
  • Roast on low flame until the spices turn aromatic.
  • Cool completely, and grind to a coarse powder.
  • Transfer the powder to a large bowl.
  • Add ¼ cup chilli powder, 1 tbsp turmeric, 2 tbsp aamchur, 1 tbsp garam masala, ¼ cup kasuri methi, 2 tbsp sesame, and 2 tbsp salt.
  • Mix well making sure everything is well combined.
  • You can use this sabji masala mix to prepare any dry sabzi or bharwa sabji.
  • Finally, store the Sabji Masala Recipe in an airtight container.
