firstly, in a large mixing bowl take 1 cup rice flour, ½ cup rava and ¼ cup maida.
also add 2 chilli, 2 tbsp coriander leaves, few curry leaves, pinch of hing, ½ tsp chilli powder, 1 onion and ½ tsp salt.
combine well making sure the spices gets mixed well.
now heat 2 tbsp oil and pour over prepared flour mixture.
roughly mix with the help of spoon and later squeeze & crumble with hand.
pour ¼ cup of water and combine well.
add more water as required and prepare soft dough.
grease hands with oil and pinch small ball sized dough.
prepare ball and flatten over greased palm. alternatively use greased plastic sheet / banana leaf or butter paper.
deep fry in hot oil. make sure not to over crowd the oil.
stir occasionally keeping the flame on medium.
fry till the maddur vada turns golden and crisp.
finally, serve maddur vada / maddur vade with coconut chutney / green chutney.
