Ingredients

  • 1 onion sliced
  • 2 chilli finely chopped
  • 1 inch ginger chopped
  • 2 tbsp coriander finely chopped
  • 1 cup rice flour
  • 1 cup maida
  • ½ cup rava coarse
  • 2 tbsp sesame
  • 2 tbsp roasted peanuts crushed
  • pinch hing
  • 1 tsp salt
  • water for kneading
  • oil for frying

Instructions

  • Firstly, in a bowl take 1 onion, 2 chilli, 1 inch ginger and 2 tbsp coriander.
  • Add 1 cup rice flour, 1 cup maida and ½ cup rava.
  • Also add 2 tbsp sesame, 2 tbsp roasted peanuts, pinch hing and 1 tsp salt.
  • Crumble and mix well making sure everything is well combined.
  • Further, add 2 tbsp hot oil and mix. This helps the vada to turn crunchy.
  • Add water slowly and knead the dough.
  • Do not add more water as the dough needs to be tight.
  • Pinch a ball-sized dough, press and flatten it slightly thick.
  • Deep fry in hot oil, keeping the flame on medium.
  • Do not touch for 2 minutes as there are chances for the vada to break.
  • Stir occasionally and fry both sides until the vada turns golden brown.
  • Drain off to remove excess oil.
  • Finally, enjoy Maddur Vada Recipe with coconut chutney.
