Firstly, in a pan dry roast 2 tbsp peanuts on low flame until they turn crunchy.
Add 2 tsp fennel, 2 tsp cumin, 2 tsp coriander seeds and 2 tbsp sesame.
Roast until the spices turn aromatic.
Cool completely, and transfer to the mixer jar.
Add 1 tbsp chilli powder, ½ tsp turmeric, 1 tsp aamchur, 1 tsp salt, 3 cloves garlic and 3 tbsp roasted besan.
Grind to fine powder without adding water.
Now cut the head and tail of bhindi and slit in the centre.
Stuff the masala in bhindi and keep it aside.
Now in a large pan heat 2 tbsp oil. Add 1 tsp cumin, pinch of hing and splutter the tempering.
Add in stuffed bhindi and roast on medium flame.
Now cover and cook on medium flame until the bhindi is cooked well.
Stir and cook until the bhindi is cooked from all the sides.
Add in leftover masala, 2 tbsp kasuri methi and mix well.
Finally, enjoy Bharwa Bhindi with roti or steamed rice.
