bharwa bhindi recipe | stuffed bhindi recipe | stuffed okra fry recipe with detailed photo and video recipe. basically okra’s are slit and stuffed with chickpea flour and other grounded spices. it is typically served as a side dish to dal rice or sambar rice, but can also be served with roti’s and chapathi’s.
okra recipes are always my favourite recipes, and i try to prepare and mix and match several different cuisines with ladies finger. recently i had posted kurkuri bhindi recipe which is a deep fried recipe. but i wanted to post a healthier version of bhindi recipe with less oil and yet not compromising on the taste. bharwa bhindi recipe or stuffed bhindi recipe is one such recipe which is stuffed with spices and stir fried. i have prepared this recipe without any gravy, but this can also be prepared with tomato onion gravy.
even though stuffed okra fry recipe is a simple recipe, but some important tips to make it perfect. firstly, always buy a tender and small okra or bhindi, as it tastes great and cooks faster. remove the large seeds of bhindi before stuffing into okra. these seeds makes bhindi sticky and does not add any value to the taste. moreover, i have cut the okra’s at the center into two pieces. alternatively, you can stuff the entire lady finger and then fry. lastly, do not add any water or dry out the moisture in bhindi’s before cooking.

Ingredients
for stuffing:
- ¼ cup besan / gram flour / chikpea flour
- ¾ tsp kashmiri chili powder / lal mirch powder
- ½ tsp turmeric / haldi
- salt to taste
- ¾ tsp coriander powder / dhaniya powder
- ¼ tsp cumin powder / jeera powder
- 1 tsp aamchur powder / dry mango powder
- ½ tsp garam masala
- pinch of hing / asafoetida
- ¼ tsp ginger paste / adrak paste
other ingredients:
- 10 bhindi / okra / lady finger
- 3 tbsp oil
- 1 tsp jeera / cumin seeds
- 10 curry leaves / kadi patta
- 2 green chilli / hari mirch (slit lengthwise)
- ½ onion (finely chopped)
Instructions
stuffing / spice mix recipe:
- firstly, in a small mixing bowl take all the ingredients listed in for stuffing.
- further, crumble, mix and keep aside.
bharwa bhindi recipe:
- firstly, slit the bhindi and stuff the prepared spice mix powder
- keep all the stuffed bhindi aside.
- further, heat oil in large kadai and splutter cumin seeds.
- add in curry leaves and wait for 30 seconds.
- also saute onions and green chili till they shrink in size.
- further, place the stuffed bhindi into the kadai.
- add leftover masala over the bhindi and give a gentle mix.
- furthermore, cover and simmer for 3 minutes.
- saute in between till the bhindis get cooked completely.
- finally, serve bharwa bhindi / stuffed bhindi with rice or roti.
how to make bharwa bhindi or stuffed okra fry with step by step photos:
stuffing / spice mix recipe:
- firstly, in a small mixing bowl take ¼ cup besan.
- further add all dry spices chili powder, turmeric, coriander powder, cumin powder, aamchur powder, garam masala, hing, salt and ginger paste.
- crumble and mix well.
bharwa bhindi recipe:
- firstly, cut the head and tail of bhindi. wash and wipe of bhindi atleast 1 hour before chopping. else they will turn sticky.
- further chop into 1 inch size or use it whole.
- also slit them lengthwise without cutting them into 2 halves.
- now stuff the prepared spice mix powder well into the slit bhindi.
- keep all the stuffed bhindi aside.
- further, heat oil in large kadai and splutter cumin seeds. do not reduce the amount of oil, else the spices will burn.
- add in curry leaves and wait for 30 seconds.
- also saute onions and green chili till they shrink in size.
- further, place the stuffed bhindi into the kadai.
- add leftover masala over the bhindi and give a gentle mix.
- furthermore, cover and simmer for 3 minutes.
- saute in between making sure the spices do not burn and bhindis cook from all the sides.
- again cover and simmer for 5 minutes
- or till the bhindis get cooked completely.
- finally, serve bharwa bhindi / stuffed bhindi with rice or roti.
notes:
- firstly, select small and tender okras for faster cooking.
- also as a variation, the bharwan bhindi can be added to curry and serve as bharwan bhindi curry.
- furthermore, make sure to cook on very low flame else the spices will burn.
- additionally, do not add any water as the turn bhindi sticky.
- also adjust the spices according to your preference. make sure the spice mix is spicy and tangy.
- finally, bharwa bhindi / stuffed bhindi taste great when prepared with small and tender okras.

Hello ridhima, i think you should be fine preparing it with frozen if they are not cut frozen bhindi. also defrost them before silting them,
