Firstly, in a bowl take 20 mushroom in a bowl and blanch in hot water for 5 minutes.
Drain off the water, and transfer the mushroom into the bowl.
Add in ½ tsp chilli powder, ½ tsp turmeric, ½ tsp cumin powder, 1 tsp ginger garlic paste and mix well.
Also add 2 tbsp corn flour, 2 tbsp maida and ½ tsp salt.
Mix well, making sure everything is well combined.
Add in water and prepare the batter coating uniformly.
Deep fry into oil, keeping the flame on medium.
Fry until the mushroom turns golden brown and crisp.
Drain off and keep aside.
In the wok heat 2 tbsp oil, 5 cloves garlic, 1 inch ginger and 2 chilli.
Stir fry till the spices turn aromatic.
Also fry 2 tbsp spring onion, ½ onion till the onion softens.
Add ½ capsicum, ½ onion and stir fry till the capisucm turn crunchy.
Now add 2 tbsp tomato sauce, 2 tsp chilli sauce, 2 tsp vinegar, 2 tsp soy sauce, 1 tsp chilli powder and ½ tsp salt.
Sir fry till the sauces are well combined.
Also add 2 tbsp corn flour slurry and cook till the sauce turns glossy.
Add in fried mushroom, 2 tbsp spring onion and mix well.
