Ingredients

  • 1 carrot grated
  • 3 tbsp peas
  • 3 tbsp sweet corn
  • 1 capsicum finely chopped
  • ½ onion finely chopped
  • 1 inch ginger grated
  • 1 cup veg mayonnaise
  • 2 tbsp coriander finely chopped
  • ½ tsp pepper powder
  • ½ tsp mixed herbs
  • ½ tsp salt
  • 5 slices bread white or brown

Instructions

  • Firstly, in a bowl take 1 carrot, 3 tbsp peas, 3 tbsp sweet corn, 1 capsicum, ½ onion and 1 inch ginger.
  • Also, add 1 cup of veg mayonnaise, 2 tbsp of coriander, ½ tsp of pepper powder, ½ tsp of mixed herbs, and ½ tsp of salt, and mix well.
  • Spread butter on both slices of bread.
  • Now top with prepared mayo stuffing.
  • Cover up with another slice of bread.
  • Trim the sides and cut into half.
  • Finally, enjoy Veg Mayonnaise Sandwich for your lunch box.
