Firstly, in a bowl take 1 carrot, 3 tbsp peas, 3 tbsp sweet corn, 1 capsicum, ½ onion and 1 inch ginger.
Also, add 1 cup of veg mayonnaise, 2 tbsp of coriander, ½ tsp of pepper powder, ½ tsp of mixed herbs, and ½ tsp of salt, and mix well.
Spread butter on both slices of bread.
Now top with prepared mayo stuffing.
Cover up with another slice of bread.
