Firstly, in a pan, heat 2 tbsp oil, add 1 tsp cumin and a pinch of hing.
Add 2 chillies, 1 inch of ginger, and sauté well.
Also add 1 carrot, 5 tbsp cauliflower, 4 tbsp peas, 5 beans and saute well.
Mash the vegetables, making sure they're cooked uniformly.
Now add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala, ½ tsp aamchur, ½ tsp kala namak and 1 tsp salt.
Sauté on a low flame till the spices turn aromatic.
Now add 3 boiled potatoes, 1 cup paneer, 2 tbsp coriander and 2 tbsp kasuri methi.
Mix well, ensuring all the masalas are thoroughly combined. Keep aside.
Now pinch a ball-sized dough and roll it about 4 inches in diameter.
Place a ball-sized prepared mix veg stuffing in the centre.
Take the edge and start pleating, bringing it to the centre.
Also, join the pleats together and secure tight pinching off excess dough.
Sprinkle some wheat flour and roll slightly thick.
On a hot tawa, place the rolled paratha and cook for a minute.
Furthermore, flip the paratha when the base is partly cooked (after a minute).
Also, brush oil/ghee and press slightly. Flip again once or twice till both sides are cooked properly.
Finally, serve hot Mix Veg Paratha with sauce, raita or pickle.
