- firstly, in a large bowl take 3 cup maida, 1 tsp baking powder, ¼ tsp baking soda and ½ tsp salt. mix well. 
- now add ½ cup curd and combined well. 
- adding water as required to knead the dough. 
- knead for 5 minutes forming a soft dough. 
- now add 2 tbsp oil and continue to knead. 
- knead to a smooth and soft dough. tuck the dough making sure all the sides are smooth. 
- cover and rest for 2 hours. 
- meanwhile prepare the onion toppings, in a small bowl take 1 onion. 
- add 2 tbsp coriander, ½ tsp cumin powder, ½ tsp chilli powder, ½ tsp garam masala, ½ tsp salt and ½ tsp chaat masala. 
- mix well making sure all the spices are well combined. keep aside. 
- after the dough has rested for 2 hours, knead the dough slightly. 
- pinch a large ball sized dough and roll. 
- dust the maida and roll to an oval shape with a slightly thick thickness. 
- spread onion topping and press gently. 
- place a butter paper, and roll making sure the onions stick to the dough. 
- flip over and now spread a tbsp of water. this helps to stick the kulcha on tawa. 
- now transfer the rolled kulcha on hot tawa (waterside facing the tawa) 
- press gently, helping the kulcha to stick to the tawa. 
- cook for a minute, or until a couple of bubbles appear and the base is cooked well. 
- now flip over and keep over the flame. this gives the tandoor effect helping the kulcha to cook like in tandoor. 
- scrape the sides and brush butter over the kulcha before serving. 
- finally, onion kulcha recipe tastes great when served with paneer curry.
