- firstly, in a pan heat 1 tbsp butter. add ½ onion, 10 beans, ½ carrot, ½ tomato, 3 tbsp peas and 5 baby corn. 
- add ½ tsp salt and stir fry on high flame for a minute. 
- also add ½ yellow capsicum, ½ green capsicum and ½ red capsicum. 
- stir fry until the vegetables shrink slightly yet remain crunchy. keep aside. 
- in a large wok, heat 2 tbsp oil. add 1 tsp cumin, 1 tsp kasuri methi, 3 clove garlic, 1 inch ginger and 1 chilli. 
- saute until the spices turn aromatic. 
- now add ½ onion and saute until onions turn golden brown. 
- keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp salt/ 
- saute on low flame until the spices turn aromatic. 
- furthermore, add 2 tomato and saute until tomatoes turn mushy. 
- now add 2 tbsp tomato sauce and mix well forming saucy consistency. 
- add in sauteed vegetables. along with ½ tsp garam masala and ¼ tsp pepper powder. 
- mix well keeping the flame on high. 
- finally, add 2 tbsp coriander and enjoy veg jalfrezi with roti.
