i am always a huge fan of unique recipes which adopts the best from all the cuisine and presents you a fusion recipe. jalfrezi is one such fusion and unique recipe. like all other indo chinese recipes, even the jalfrezi variant comes from the bengal streets. generally, it is made with meat or fish as its main ingredient but has undergone many adaption and vegetable or mushroom or paneer based jalfrezi for vegetarians. it is made with stir-frying vegetables which is very synonym to the Chinese cuisine. it was originated by stir-frying all the leftover with chilli, onion and sauces used in indo chinese cuisine. however, that concept of leftover has vanished by now and are prepared with freshly available vegetables and meat.

furthermore, some more additional tips, suggestions and variants to spice it up the vegetable jalfrezi recipe. firstly, for the mix veg jalfrezi, i would heavily recommend using different types of vegetables as much as possible. also, chop the vegetables randomly as you do for any indo chinese recipes. these veggies have to be stir-fried at high flame so that it gets cooked but still holds the crunchiness. secondly, the jalfrezi recipes are made semi-dry with no gravy base. having said that you can have a gravy of tomato and onion sauce, but i would still recommend having the dry variant. lastly, you can follow the same procedure and spice mix to prepare mushroom, paneer, and also a vegan option with tofu.

Ingredients
  

for stir-frying:

  • 1 tbsp butter
  • ½ onion, petals
  • 10 beans, chopped
  • ½ carrot, chopped
  • ½ tomato, sliced & deseed
  • 3 tbsp peas
  • 5 baby corn, chopped
  • ½ tsp salt
  • ½ yellow capsicum, sliced
  • ½ green capsicum, sliced
  • ½ red capsicum, sliced

for sabzi:

  • 2 tbsp oil
  • 1 tsp cumin
  • 1 tsp kasuri methi
  • 3 clove garlic, chopped
  • 1 inch ginger, julienne
  • 1 chilli, slit
  • ½ onion, finely chopped
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • ½ tsp salt
  • 2 tomato, chopped
  • 2 tbsp tomato sauce
  • ½ tsp garam masala
  • ¼ tsp pepper powder
  • 2 tbsp coriander, finely chopped

Instructions
 

  • firstly, in a pan heat 1 tbsp butter. add ½ onion, 10 beans, ½ carrot, ½ tomato, 3 tbsp peas and 5 baby corn.
  • add ½ tsp salt and stir fry on high flame for a minute.
  • also add ½ yellow capsicum, ½ green capsicum and ½ red capsicum.
  • stir fry until the vegetables shrink slightly yet remain crunchy. keep aside.
  • in a large wok, heat 2 tbsp oil. add 1 tsp cumin, 1 tsp kasuri methi, 3 clove garlic, 1 inch ginger and 1 chilli.
  • saute until the spices turn aromatic.
  • now add ½ onion and saute until onions turn golden brown.
  • keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp salt/
  • saute on low flame until the spices turn aromatic.
  • furthermore, add 2 tomato and saute until tomatoes turn mushy.
  • now add 2 tbsp tomato sauce and mix well forming saucy consistency.
  • add in sauteed vegetables. along with ½ tsp garam masala and ¼ tsp pepper powder.
  • mix well keeping the flame on high.
  • finally, add 2 tbsp coriander and enjoy veg jalfrezi with roti.
