Ingredients

for dough:

  • 3 cup maida
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ cup curd
  • water for kneading
  • 2 tbsp oil

for onion toppings:

  • 1 onion finely chopped
  • 2 tbsp coriander finely chopped
  • ½ tsp cumin powder
  • ½ tsp chilli powder
  • ½ tsp garam masala
  • ½ tsp salt
  • ½ tsp chaat masala

Instructions

  • firstly, in a large bowl take 3 cup maida, 1 tsp baking powder, ¼ tsp baking soda and ½ tsp salt. mix well.
  • now add ½ cup curd and combined well.
  • adding water as required to knead the dough.
  • knead for 5 minutes forming a soft dough.
  • now add 2 tbsp oil and continue to knead.
  • knead to a smooth and soft dough. tuck the dough making sure all the sides are smooth.
  • cover and rest for 2 hours.
  • meanwhile prepare the onion toppings, in a small bowl take 1 onion.
  • add 2 tbsp coriander, ½ tsp cumin powder, ½ tsp chilli powder, ½ tsp garam masala, ½ tsp salt and ½ tsp chaat masala.
  • mix well making sure all the spices are well combined. keep aside.
  • after the dough has rested for 2 hours, knead the dough slightly.
  • pinch a large ball sized dough and roll.
  • dust the maida and roll to an oval shape with a slightly thick thickness.
  • spread onion topping and press gently.
  • place a butter paper, and roll making sure the onions stick to the dough.
  • flip over and now spread a tbsp of water. this helps to stick the kulcha on tawa.
  • now transfer the rolled kulcha on hot tawa (waterside facing the tawa)
  • press gently, helping the kulcha to stick to the tawa.
  • cook for a minute, or until a couple of bubbles appear and the base is cooked well.
  • now flip over and keep over the flame. this gives the tandoor effect helping the kulcha to cook like in tandoor.
  • scrape the sides and brush butter over the kulcha before serving.
  • finally, onion kulcha recipe tastes great when served with paneer curry.
