Firstly, in a large vessel get the water to a boil.
Add 1 tbsp salt and 2 pack hakka noodles.
Stir and boil for 3 minutes or until the noodles are cooked al dente.
Drain off the noodles and make sure the noodles are not overcooked.
Rinse in cold water to stop from overcooking.
Transfer the noodles to a large plate and coat them with 2 tsp oil to prevent them from sticking to each other. Keep aside.
In a large wok, heat 2 tbsp oil. Add 2 chilli, 1 inch ginger and 5 cloves garlic. Stir fry on high flame.
Add 1 onion, 2 tbsp spring onion and stir fry on high flame.
Further add 1 carrot, 1 cup cabbage and ½ capsicum.
Stir fry on high flame till the vegetables turn crunchy.
Add boiled noodles, ½ tsp salt and ½ tsp pepper powder.
Also add 2 tbsp tomato sauce, 1 tbsp chilli sauce, 2 tsp soy sauce and 1 tbsp vinegar.
Toss gently coating all the noodles with sauce.
Further add 2 tbsp spring onion and stir fry making sure everything is well combined.
Finally, enjoy Veg Chowmein Noodles with tomato sauce.
