Indo-Chinese recipes originated from the Kolkata streets but have taken over Indian cuisine since its inception. In the beginning, it was just fried rice and noodles, but has adapted all the variations and extensions of Asian cuisine. One of them is the Chowmein recipe and the adapted version is the vegetarian chowmein recipe, loaded with vegetables and spices.

I am not a huge fan of Indo-Chinese cuisine and I like Indian-style curries and rice variations. Yet I have a special interest in noodles, perhaps due to the Maggi noodles introduced to me during my school days. I generally end up making simple Maggi noodles with vegetables topping in them. But I do get the craving for Asian-style noodles too. Especially the crunchy yet cooked vegetables in it due to the high-intensity flame cooking. In addition, the sauce used would nicely coat the individual noodles making it a perfect lunch or dinner meal. In addition to the Asian sauces, I have added a hint of Indian spices mixed with Asian sauce. Thus making it an ideal Indo-Chinese recipe, meeting the native taste buds.

Furthermore, some additional tips suggestions, and variations to the Veg Chowmein recipe. Firstly, vegetable chopping or cutting is very critical for this recipe. It has to be sliced lengthwise but thinly so that it can be tossed at high flame and gets cooked easily. Moreover, you can also add any choice of vegetables as per your preference. Secondly, I would heavily recommend using dry noodles and boiling them to cook. Avoid using the ready-to-use noodles as they may break and turn mushy when tossed. Lastly, if you do not like to add all the Indian spices one by one, you can stick to just one garam masala. this should have been slightly more effective than the other spices added, but it should be alright.

Ingredients
  

For boiling noodles:

  • water
  • 1 tbsp salt
  • 2 pack hakka noodles
  • 2 tsp oil

For chowmein:

  • 2 tbsp oil
  • 2 chilli, finely chopped
  • 1 inch ginger, chopped
  • 5 cloves garlic, chopped
  • 1 onion, sliced
  • 2 tbsp spring onion, chopped
  • 1 carrot, chopped
  • 1 cup cabbage, chopped
  • ½ capsicum, chopped
  • ½ tsp salt
  • ½ tsp pepper powder
  • 2 tbsp tomato sauce
  • 1 tbsp chilli sauce
  • 2 tsp soy sauce
  • 1 tbsp vinegar
  • 2 tbsp spring onion, chopped

Instructions
 

  • Firstly, in a large vessel get the water to a boil.
  • Add 1 tbsp salt and 2 pack hakka noodles.
  • Stir and boil for 3 minutes or until the noodles are cooked al dente.
  • Drain off the noodles and make sure the noodles are not overcooked.
  • Rinse in cold water to stop from overcooking.
  • Transfer the noodles to a large plate and coat them with 2 tsp oil to prevent them from sticking to each other. Keep aside.
  • In a large wok, heat 2 tbsp oil. Add 2 chilli, 1 inch ginger and 5 cloves garlic. Stir fry on high flame.
  • Add 1 onion, 2 tbsp spring onion and stir fry on high flame.
  • Further add 1 carrot, 1 cup cabbage and ½ capsicum.
  • Stir fry on high flame till the vegetables turn crunchy.
  • Add boiled noodles, ½ tsp salt and ½ tsp pepper powder.
  • Also add 2 tbsp tomato sauce, 1 tbsp chilli sauce, 2 tsp soy sauce and 1 tbsp vinegar.
  • Toss gently coating all the noodles with sauce.
  • Further add 2 tbsp spring onion and stir fry making sure everything is well combined.
  • Finally, enjoy Veg Chowmein Noodles with tomato sauce.
