Ingredients

  • ¼ cup oil
  • 1 tsp cumin
  • pinch hing
  • 5 cloves garlic finely chopped
  • 2 onion sliced
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 3 tomato sliced
  • 1 cup water
  • 1 tsp salt
  • ½ cup curd
  • 10 baby potato half
  • 1 onion cubed
  • 2 tsp kasuri methi crushed
  • ½ tsp garam masala
  • 2 tbsp coriander chopped

Instructions

  • Firstly, in a pressure cooker heat ¼ cup oil. Add 1 tsp cumin, pinch hing and splutter.
  • Add 5 cloves garlic, 2 onion and saute well.
  • Once the onion softens and changes colour, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder.
  • Saute on low flame until the spices turn aromatic.
  • Furthermore, add 3 tomatoes and saute making the tomato soft and mushy.
  • Add 1 cup water, 1 tsp salt and mix well.
  • Cover and pressure cook for 5 whistles.
  • Once the pressure is released, blend it into smooth gravy.
  • Also, add ½ cup curd and mix well.
  • Now add 10 baby potatoes and 1 onion.
  • Cover and pressure cook for 2 whitles or until the potatoes are cooked well.
  • Add 2 tsp kasuri methi, ½ tsp garam masala and 2 tbsp coriander. Mix well.
  • Finally, enjoy Aoo Pyaz Sabzi with roti and rice.
