Firstly, in a pressure cooker heat ¼ cup oil. Add 1 tsp cumin, pinch hing and splutter.
Add 5 cloves garlic, 2 onion and saute well.
Once the onion softens and changes colour, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder.
Saute on low flame until the spices turn aromatic.
Furthermore, add 3 tomatoes and saute making the tomato soft and mushy.
Add 1 cup water, 1 tsp salt and mix well.
Cover and pressure cook for 5 whistles.
Once the pressure is released, blend it into smooth gravy.
Also, add ½ cup curd and mix well.
Now add 10 baby potatoes and 1 onion.
Cover and pressure cook for 2 whitles or until the potatoes are cooked well.
Add 2 tsp kasuri methi, ½ tsp garam masala and 2 tbsp coriander. Mix well.
Finally, enjoy Aoo Pyaz Sabzi with roti and rice.
