One such easy and simple, yet considered to be a premium potato curry is Aloo Pyaz Sabji where both potato and onions are treated as hero ingredients.

As I explained earlier, there are so many different types of potato curries across India. There are individual and tailored curries for each region and state. Yet there certain types of potato curries that are practiced across India and this is one such type of curry. The use of onions and potatoes in the traditional gravy base makes it more likable. Also, both onions and potatoes complement each other and thus give an experience of premium curry. The same curry is even further extended by adding other hero ingredients like paneer and mushroom. Adding these does not make it more premium and more importantly not mandatory. Do try this and I am very sure that it would be appreciated by all your family members.

Baby potatoes are tender and ideal for any curries. However, not mandatory, and if you do not have access to it, you can use normal potatoes and cut them into small sizes. Secondly, I have made this curry in the pressure cooker to hasten the cooking process. However, pressure cooking can be tricky so you can use the open cooking vessel to prepare it. Lastly, I have shown the gravy version of Punjabi Aloo Pyaz Sabzi which is super popular. But you may also make it a dry version without a gravy base.

Ingredients
  

  • ¼ cup oil
  • 1 tsp cumin
  • pinch hing
  • 5 cloves garlic, finely chopped
  • 2 onion, sliced
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 3 tomato, sliced
  • 1 cup water
  • 1 tsp salt
  • ½ cup curd
  • 10 baby potato, half
  • 1 onion, cubed
  • 2 tsp kasuri methi, crushed
  • ½ tsp garam masala
  • 2 tbsp coriander, chopped

Instructions
 

  • Firstly, in a pressure cooker heat ¼ cup oil. Add 1 tsp cumin, pinch hing and splutter.
  • Add 5 cloves garlic, 2 onion and saute well.
  • Once the onion softens and changes colour, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder.
  • Saute on low flame until the spices turn aromatic.
  • Furthermore, add 3 tomatoes and saute making the tomato soft and mushy.
  • Add 1 cup water, 1 tsp salt and mix well.
  • Cover and pressure cook for 5 whistles.
  • Once the pressure is released, blend it into smooth gravy.
  • Also, add ½ cup curd and mix well.
  • Now add 10 baby potatoes and 1 onion.
  • Cover and pressure cook for 2 whitles or until the potatoes are cooked well.
  • Add 2 tsp kasuri methi, ½ tsp garam masala and 2 tbsp coriander. Mix well.
  • Finally, enjoy Aoo Pyaz Sabzi with roti and rice.

How to make Aloo Pyaz with step-by-step photos

Notes:

  • Firstly, I have blended the onion tomato gravy base. you can just mash if you prefer the coarse texture.
  • Also, you can deep fry the aloo and then add it to the gravy base to enhance the flavour of the aloo.
  • Additionally, the same recipe can be prepared in kadai. However the cooking time increases.
  • Finally, Aloo Pyaz Sabzi Recipe tastes great when prepared with a generous amount of oil.
