Firstly, in a large kadai heat 2 tbsp ghee and saute spices till they turn aromatic.
Add ½ onion, 5 cloves garlic and saute well.
Also add 1 potato, 1 carrot, 5 beans, 3 tbsp peas, 10 florets cauliflower.
Stir fry till the vegetables turn crunchy.
Keep the flame low; add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp garam masala, and ¾ tbsp salt.
Further add 2 tbsp coriander, 2 tbsp mint, 2 chilli and saute until the spices turn aromatic.
Add in 3 cup water and mix well.
Add 1½ cup basmati rice (soaked 20 minutes) and mix gently.
Add 2 tsp lemon juice and bring the water to a boil.
Once the water comes to a boil, cover and simmer for 20 minutes.
Fluff the rice gently making sure the rice is cooked well.
