Ingredients

  • 2 tbsp ghee
  • 1 tsp cumin
  • 1 bay leaf
  • ½ tsp pepper
  • 1 black cardamom
  • 4 pods green cardamom
  • 5 cloves
  • 1 inch cinnamon
  • 2 tbsp kasuri methi crushed
  • pinch hing
  • ½ onion sliced
  • 5 cloves garlic chopped
  • 1 potato cubed
  • 1 carrot chopped
  • 5 beans chopped
  • 3 tbsp peas
  • 10 cauliflower florets
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • ¾ tbsp salt
  • 2 tbsp coriander chopped
  • 2 tbsp mint chopped
  • 2 chilli slit
  • 3 cup water
  • cup basmati rice soaked 20 minutes
  • 2 tsp lemon juice

Instructions

  • Firstly, in a large kadai heat 2 tbsp ghee and saute spices till they turn aromatic.
  • Add ½ onion, 5 cloves garlic and saute well.
  • Also add 1 potato, 1 carrot, 5 beans, 3 tbsp peas, 10 florets cauliflower.
  • Stir fry till the vegetables turn crunchy.
  • Keep the flame low; add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp garam masala, and ¾ tbsp salt.
  • Further add 2 tbsp coriander, 2 tbsp mint, 2 chilli and saute until the spices turn aromatic.
  • Add in 3 cup water and mix well.
  • Add 1½ cup basmati rice (soaked 20 minutes) and mix gently.
  • Add 2 tsp lemon juice and bring the water to a boil.
  • Once the water comes to a boil, cover and simmer for 20 minutes.
  • Fluff the rice gently making sure the rice is cooked well.
  • Finally, enjoy Tehri Pulao Recipe with raita.
