mango chutney recipe | green mango chutney | mango chutney sauce with detailed photo and video recipe. a tangy and spicy condiment prepared from raw or unripe mango which is typically eaten as side dish. there are several variations to this simple chutney recipe and this post is inspired from the south indian mango chutney.
this mango chutney recipe was shared by raghavendra bhat from bangalore, india, who also works as a chef in one of the restaurant in bangalore. he has shared quite a few recipes and i found this recipe interesting and more importantly perfect season to share it. to be honest i was skeptical to share it as i wasn’t sure about the taste. moreover i was under impression that mango chutney was prepared with coconut and raw mango slices were added as an alternative to tamarind. however, after i tried this recipe i was already a huge fan of this chutney and i prepared it in bulk and stored in my refrigerator. many many thanks to you raghavendra once again.
while the recipe is extremely simple, yet i would like to share some of the tips and variations for a perfect mango chutney recipe. firstly, i heavily recommend to use unripe mangoes or raw mangoes for this recipe. otherwise, if ripe mangoes are used, the chutney may turn sweet and spoil the taste. always use dry spoon while handling and avoid any moisture for a better shelf life. lastly, the chutney tastes great based on the combination of spicy, salty and sour taste it has to offer. hence increase or decrease the spice and salt level based on the sourness of mango. my mangoes has a strong sour taste.

Ingredients
- 1 tsp oil
- 5-6 whole kashmiri red chilli, dried
- 1 tbsp channa dal
- ½ tbsp urad dal
- ½ tsp cumin seeds / jeera
- 1 tsp coriander seeds
- ¼ tsp methi / fenugreek seeds
- 1 cup raw mango, roughly chopped
- 3 cloves garlic
- salt to taste
other ingredients:
- 2 tbsp oil
- 1 tsp mustard seeds / rai
- 1 dried kashmiri red chilli, broken
- few curry leaves
- ¼ tsp turmeric / haldi
Instructions
- firstly, in a heavy bottomed kadai heat oil.
- add in 5-6 red chilli, 1 tbsp channa dal, ½ tbsp urad dal, ½ tsp cumin seeds, 1 tsp coriander seeds and ¼ tsp methi.
- roast in low flame for 2 minutes or till the spices turn aromatic.
- transfer to the blender.
- also add in 1 cup raw mango, 3 cloves garlic and salt to taste.
- blend to coarse paste without adding any water. keep aside.
- now heat oil in the same kadai.
- once the oil is hot, add in 1 tsp mustard seeds, 1 dried red chilli and few curry leaves. allow to splutter.
- further add prepared mango chutney.
- also add turmeric and saute well.
- saute on low flame for 2 minutes.
- finally, serve raw mango chutney along with rice, idli or dosa.
how to make green mango chutney with step by step photo:

notes:
- firstly, use raw and tangy mango for more tasty chutney.
- also, add more chilli if the mangoes are more tangy.
- additionally, if the mangoes are not tangy, then add a piece of tamarind or lemon juice.
- finally, raw mango chutney stays good for atleast 3 days when refrigerated.
