It is integral and can be used across different recipes, including curries, snacks, and beverages. One such simple yet nutrient-rich recipe is the Masala Doodh with Powder recipe.
In India, any meal is incomplete without a refreshing and tasty beverage drink. There are many addictive and healthy but nothing beats the combination of warm milk and dry fruit powder. Generally, it is made and served as a tea or coffee alternative, but serving it just before bed or to guests makes it more attractive. In this recipe, I have shown a simple way of preparing it. The first step is to make the powder by mixing all the nuts herbs and spices. This can be stored for later use with a shelf life of weeks. To prepare the Masala Milk, you need to boil the milk and mix the prepared powder. Once it is mixed, the milk can be served warm or even chilled based on individual preferences.
Furthermore, some more additional and important tips, suggestions, and variants to the Masala Milk Recipe. Firstly, I would highly recommend using full cream thick milk to prepare this beverage. Avoid using skim milk or any other types of milk like almond or soymilk to prepare this beverage. Secondly, once the milk is prepared, it is best served while it is still warm. You may serve it chilled but have to prepare it well ahead in advance. Lastly, you can experiment with the flavors by adding additional flavors like chocolate, vanilla, and any fruit flavor. This would alter the taste, but it can be certainly interesting.

About Masala Milk

There are many different ways to make this simple Masala Milk Recipe. The most common way is to make it with a range of nuts spices and herbs without any additional flavour. Yet it can also be made with chocolate, vanilla, or even any tropical fruit flavor. In addition, the milk prepared can also be frozen to make kulfi ice cream for kids and young audiences.

Masala Milk Recipe | Doodh Masala | Masala Milk Powder
Ingredients
- ¼ cup almonds
- ¼ cup cashew
- 2 tbsp pistachios
- 3 pods cardamom
- ¼ tsp pepper powder
- ¼ tsp ginger powder
- ¼ tsp turmeric
- ½ tsp saffron
Instructions
- Firstly, in a large heavy-bottomed pan take ¼ cup almonds, ¼ cup cashew and 2 tbsp pistachios.
- Roast on low flame until the nuts turn golden and crunchy.
- Cool completely, and transfer to the mixer jar.
- Also add 3 pods cardamom, ¼ tsp pepper powder, ¼ tsp ginger powder, ¼ tsp turmeric.
- Pulse and grind for 10 times or until the nuts turn into coarse powder.
- Now add ½ tsp saffron and give a good mix.
- Transfer the mixture into airtight container, and you can store the Masala Milk mixture for upto 2 months in refrigerator.
- To prepare the masala doodh, in saucepan take 3 cup milk and warm on medium flame.
- Add 3 tbsp of prepared masala milk mixture and mix well.
- Continue to mix and boil on medium flame preventing from milk from sticking to the bottom.
- Simmer for 5 minutes or until the milk thickens slightly.
- Now add 2 tbsp sugar and boil for 1 minute.
- Pour the Masala Milk into a glass and enjoy piping hot, or you can chill it and serve chilled with ice cubes.

How to Make Masala Doodh with step-by-step photo

Notes
- firstly, make sure to roast the nuts on low flame else the nuts will not turn crunchy from inside and release oil while grinding.
- Also, if you have access to the chopper mixer grinder, it is best to powder it with it, as it will keep the crunchy bite of nuts.
- Additionally, I have not added sugar to the mixture, as we can adjust the sugar depending on the preferences.
- Finally, Masala Milk Recipe or Masala Doodh Recipe tastes great when served chilled or hot.
