Aloo Methi Paratha Recipe | Aalu Methi Paratha | No Stuff Potato Paratha with detailed photo and video recipe. Basically an extension or a simpler way of preparing a spiced Indian bread recipe. It is prepared with basic ingredients like boiled potatoes, fenugreek leaves, and wheat flour like any other Indian flat bread. The paratha is loaded with all spices and herbs and hence makes it an interesting meal without any requirement for any curry or side dish in particular.

Traditionally vegetable-based stuffing is stuffed inside a wheat flour-based flatbread, but it can also be prepared by adding stuffing to the flour. One such popular and healthy alternative to the aloo paratha is aloo methi paratha recipe known for its simple and tasty features.

I have posted quite a few no-stuff paratha recipes where vegetable or its puree is mixed directly into bread dough. But this recipe is totally unique where one solid and another leafy vegetable are mixed directly into the dough. In other words, this paratha is a combination of aloo paratha and methi thepla. Hence this paratha can also be named as aloo methi thepla recipe. I personally like this type of thepla where it has the taste and flavour of multiple vegetables. For instance, in this, the paratha is loaded with the bitterness of methi leaves and the sweetness of potatoes. In addition, the added spice and the savoury taste make this a complete package. Furthermore, some more additional tips, suggestions, and variants to the aloo methi paratha recipe. Firstly, the paratha is not limited to just aloo and methi vegetables and can be experimented with other basic vegetables. For instance, you can use broccoli, gobi, peas, beans or carrots or a combination of these vegetables too. Secondly, as an alternative to mixing the vegetables into the dough, you can follow the stuffing method too for the aloo methi stuffing. I personally feel mixing the stuffing directly into the dough is a much easier option. Lastly, the paratha does not require any additional sides and tastes great with simple raita or spicy pickle. But, it can also be served with a simple or premium north Indian vegetable, paneer, or meat curries.

Ingredients
  

  • 1 bunch methi / fenugreek leaves, finely chopped
  • ¼ cup curd
  • ½ tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp turmeric
  • ¾ tsp garam masala
  • ¼ tsp ajwain / carom seeds
  • 2 chilli, finely chopped
  • 2 tbsp sesame
  • ½ tsp salt
  • 2 potato, boiled & mashed
  • 2 cup wheat flour
  • water, for kneading
  • 2 tsp oil

Instructions
 

  • firstly, in a large bowl take 1 bunch of finely chopped methi.
  • add ¼ cup curd, ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp turmeric and ¾ tsp garam masala.
  • also add ¼ tsp ajwain, 2 chilli, 2 tbsp sesame and ½ tsp salt.
  • mix well making sure everything is well combined.
  • now add 2 potato, 2 cup wheat flour and knead the dough.
  • add water as required and knead to a smooth and soft dough.
  • further, add 2 tsp oil and grease the dough well.
  • cover and rest for 10 minutes.
  • after 10 minutes, knead the dough again. pinch a ball-sized dough.
  • dust with wheat flour and roll uniformly.
  • further, roll to a slightly thick thickness like paratha.
  • now on a hot tawa place the rolled paratha and cook for a minute.
  • furthermore, when the base is partly cooked, flip the aloo methi paratha.
  • also, spread ½ tsp olive oil / ghee and cook both sides.
  • finally, enjoy aloo methi paratha with raita and pickle.

Notes:

  • firstly, adding curd to the methi leaves reduces the bitterness of methi.
  • also, adding aloo makes paratha super soft. you can also add besan to the dough to make it extra soft.
  • Additionally, roast the paratha on medium flame, or else the roti will not get cooked from inside.
