i have shared a quite a few bread recipes till now, and i do not have personal preference to any individual recipe. however palak bread vada is my new favourite when it come to deep frying snack with bread. there are many reasons for it, but the main reason is due to simplicity of the recipe and yet delivers a great snack. it takes only 15 minutes to prepare it and more importantly it can be done with left over bread slices. in addition, as compared to other deep fried snacks, bread vada absorbs very less oil and remains crisp for a long time. so i usually prepare it as a side dish for my weekend lunch, and it remains fresh till evening. further, the health aspect of palak bread vada cannot be neglected.
some easy tips and recommendations for a perfect and crisp palak bread vada recipe. firstly, add water only if required to prepare dough, as spinach leaves will have moisture. also, to make bread vada completely healthy, bake in preheated oven at 180 degree celsius for 25 minutes or till it turns golden and crisp. finally, if you do not have bread, then you can also use breadcrumbs and it works the same.

Ingredients
- 4 slice bread, white / brown
- ½ cup rice flour
- ¼ cup rava / semolina / suji
- 1 green chilli, finely chopped
- ¾ cup curd / yogurt
- ½ tsp ginger garlic paste
- 1 onion, finely chopped
- 1 bunch spinach / palak, finely chopped
- ½ tsp cumin / jeera
- ½ tsp chaat masala
- oil for deep frying
- ½ tsp salt
Instructions
- firstly, in a large mixing bowl break 4 slice bread into small pieces. you can alternatively crumble them in food processor.
- add in ½ cup rice flour, ¼ cup rava and ¾ cup curd.
- also add 1 green chilli, ½ tsp ginger garlic paste, 1 onion, 1 bunch spinach, ½ tsp cumin, ½ tsp chaat masala and ½ tsp salt.
- combine well making sure to squeeze and mix.
- prepare a soft dough, adding water if required.
- now grease hands with oil and pinch a small ball sized dough and flatten it.
- deep fry in hot oil or bake them in preheated oven at 180 degree celsius for 25 minutes or till it turns golden and crisp.
- stir occasionally, and fry on medium flame till it turns golden and crisp.
- finally, serve bread palak vada with coconut chutney or tomato sauce.

notes:
- firstly, squeeze the spinach well and prepare dough, as it releases moisture.
- also adding curd is optional, however it makes vada recipe more soft and tasty.
- additionally, add grated carrot and shredded cabbage to make spinach vada more healthy.
- finally, bread palak vada taste great when served hot along with masala tea.
This is not Gluten free. Bread is made with Wheat which is not gluten free. The recipe is great.
