It is a close relative or far cousin of sambar, yet has its unique taste, flavor, and savouriness. This is typically served with a combination of flavored rice, but a perfect combination with hot steamed rice, idli, dosa & range of appam.

It is prepared for almost every lunch and dinner meal and hence has undergone a lot of transformation to its core recipe. One such easy and simple sambar variant is a mixed vegetable Kootu or plain coconut-based Kootu recipe.
As I explained earlier, Kootu is a simple variant of the broad sambar recipe. Initially, it was done with just mixed vegetable Kootu, but then there are individual purpose-based Kootu too. I have posted a few of them, but this post is dedicated to the traditional one. Moreover, the coconut masala added slightly differs from the authentic sambar masala. It is the same set of spices and herbs, but just a different ratio. Changing the ratio introduces different tastes and flavors and hence the different names. Yet it can be used for various reasons as any coconut-based sambar. If you have not tried this, I would heavily recommend trying this and I am certain that it would be appreciated by everyone.
Furthermore, some more related and additional tips, suggestions, and variants to the mixed vegetable Kootu recipe. Firstly, the use of vegetables in this recipe is open-ended and you may use any edible veggies. Yet try to balance the flavor and do not overdo it by adding exotic and creating an imbalance with taste. Secondly, I have used desiccated coconut to make the coconut ground masala paste. I did not have access to fresh coconut, but if you do I would recommend it using. Lastly, the masala is made with red chilies and whole pepper. Hence keep an eye on the spice level and add red chillies based on your spice tolerance level.

Ingredients
for masala:
- 1 tsp coconut oil
- 1 tsp chana dal
- 1 tbsp urad dal
- 2 tsp coriander seeds
- 1 tsp cumin
- ¼ tsp methi
- 1 tsp pepper
- 1 inch cinnamon
- 4 dried red chilli
- few curry leaves
- pinch hing
- 1 tsp poppy seeds
- ½ cup coconut, grated
- water, for grinding
for kootu:
- 1 tbsp oil
- 1 carrot, chopped
- 1 potato, chopped
- 5 beans, chopped
- ½ cup bottle gourd, chopped
- 3 tbsp peas
- ½ tsp turmeric
- 1½ tsp salt
- 3 tbsp peanuts
- 3 cup water
- ½ cup pumpkin, chopped
- ¼ cup tamarind extract
- 2 tomato, chopped
- small piece jaggery
- 1½ cup cooked toor dal
for tempering:
- 2 tbsp ghee
- 1 tsp mustard
- 1 dried red chilli
- few curry leaves
Instructions
Masala for mixed veg kootu:
- Firstly, in a pan heat 1 tsp coconut oil. Add 1 tsp chana dal, 1 tbsp urad dal, 2 tsp coriander seeds, 1 tsp cumin, ¼ tsp methi, 1 tsp pepper, 1 inch cinnamon, 4 dried red chilli and few curry leaves.
- Saute on low flame until the spices turn aromatic.
- Now add pinch hing, 1 tsp poppy seeds and ½ cup coconut.
- Turn off the flame and saute until the coconut turns aromatic.
- Cool completely and transfer to the mixer jar.
- Add water and grind to smooth paste. Keep aside.
Vegetable preparation for kootu:
- Firstly, in a vessel heat 1 tbsp oil, add 1 carrot, 1 potato and saute for 2 minutes.
- Add 5 beans, ½ cup bottle gourd, 3 tbsp peas, ½ tsp turmeric, 1 tsp salt. Saute for 1 minute until the oil is coated well for vegetables.
- Further add 3 tbsp peanuts, 3 cup water cover and boil for 5 minutes.
- Once the vegetables are almost cooked, add ½ cup pumpkin and boil for 2 minutes. We add sweet pumpkin later as it does not take much time to cook.
- Now add ¼ cup tamarind extract, 2 tomato, small piece jaggery and boil for 5 minutes.
- Once everything is cooked well add 1½ cup cooked toor dal, prepared masala paste and mix well.
- Add water adjusting the consistency as required, also check for salt.
- Continue to boil for 3 more minutes until all the masala and flavours are well absorbed.
- To prepare the tempering, heat 2 tbsp ghee. Add 1 tsp mustard, 1 dried red chilli and few curry leaves. Splutter the tempering, and pour over the kootu.
- Finally, enjoy Mixed Vegetable Kootu with hot steamed rice, idli or dosa.

- Firstly, if you are serving kootu for idli and dosa, then make sure to keep the consistency slightly thick.
- Also, you can add vegetables of your choice to make it nutritious and healthy.
- Additionally, do not overcook the vegetables as they turn mushy.
