atta cake recipe | eggless wheat cake recipe | healthy atta cake without sugar – with detailed photo and video recipe. a healthy and tasty wheat-based cake recipe, an alternative to the popular maida based cake. in addition, the recipe is made without sugar and without egg and hence making a healthy cake recipe. moreover, this cake can also be served for breakfast and not just limiting for dessert.
there are many cake recipes made without sugar which is either made with condensed milk or perhaps the palm sugar. i personally like the palm sugar option and i have tried it many times, but it is not common in many households. hence i chose jaggery in this recipe for sweetness as it is fairly common in many households and also a healthy alternative. in addition, i have stuffed the cake with finely chopped dry fruits and raisins, very similar to banana cake recipe. hence i would heavily recommend to serve eggless atta cake for breakfast to your kids.
furthermore, some tips, suggestions and variations for this simple and healthy eggless atta cake recipe. firstly, in this recipe, i have tried to make it a complete healthy alternative with jaggery and wheat flour. but this can be easily replaced with plain flour or sugar or both as per your preference. secondly, the olive oil can easily be replaced with butter or as matter of fact with any cooking oil. lastly, in this recipe, i have used a conventional baking oven to bake the cake. you can check my previous post of chocolate cake in cooker for preparing it in a pressure cooker.

Ingredients
- 1 cup (165 grams) jaggery / gud, grated
- ¾ cup (135 grams) olive oil
- ½ cup (125 grams) curd
- 2 cup (300 grams) wheat flour / atta
- ¼ tsp baking soda
- 1 tsp baking powder
- ¼ tsp cinnamon powder
- pinch salt
- ½ cup water
- 2 tbsp almonds / badam, chopped
- 2 tbsp raisins / kishmish
- 5 cashew / kaju, chopped
- 5 walnuts / akhrot, chopped
- 6 dates / khajoor, chopped
Instructions
- firstly, in a large mixing bowl take 1 cup jaggery, ¾ cup olive oil, ½ cup curd.
- whisk well making sure jaggery dissolves completely.
- further, add 2 cup wheat flour, ¼ tsp baking soda, 1 tsp baking powder, ¼ tsp cinnamon powder and pinch salt.
- sieve all together making sure there are no lumps.
- mix well with cut and fold method until all the dry ingredients combine well with the mixture.
- also, add ½ cup water or as required and prepare a thick batter.
- furthermore, add 2 tbsp almonds, 2 tbsp raisins, 5 cashew, 5 walnuts and 6 dates.
- fold gently making sure the dry fruits are mixed well.
- bake the cake at 180 degree celsius for 40 minutes.
- further, allow the cake to cool completely and later cut into thick slices and serve.
- finally, serve the atta cake or store in an airtight container.
how to make wheat cake with step by step photo:
- firstly, in a large mixing bowl take 1 cup jaggery, ¾ cup olive oil, ½ cup curd.
- whisk well making sure jaggery dissolves completely.
- further, add 2 cup wheat flour, ¼ tsp baking soda, 1 tsp baking powder, ¼ tsp cinnamon powder and pinch salt.
- sieve all together making sure there are no lumps.
- mix well with cut and fold method until all the dry ingredients combine well with the mixture.
- do not over mix as the cake turns out to be chewy and hard.
- also, add ½ cup water or as required and prepare a thick batter.
- furthermore, add 2 tbsp almonds, 2 tbsp raisins, 5 cashew, 5 walnuts and 6 dates.
- fold gently making sure the dry fruits are mixed well.
- transfer the batter to the cake tray or bread mould. make sure to grease the mould and place a butter paper at the bottom to avoid sticking. i have used bread loaf pan from smith+nobel – 21x11cm.
- top with more dry fruits to make it look more attractive.
- pat the tray twice to remove the air incorporated into the batter.
- place the cake tray into the preheated oven. bake the cake at 180 degree celsius or 356 degrees fahrenheit for 40 minutes.
- or bake till the toothpick inserted comes out clean.
- further, allow the cake to cool completely and later cut into thick slices and serve.
- finally, serve the atta cake or store in an airtight container.
notes:
- firstly, use butter / any neutral flavoured oil if you do not want to use olive oil.
- also, if you do not prefer jaggery then replace with brown sugar/sugar.
- additionally, adding dry fruits are to your choice.
- furthermore, if you are vegan then replace curd with water and add 1 tsp vinegar.
