well, to be honest, i do not make vada frequently and generally avoid deep fried snacks for day to day snack. basically most of my deep fried snacks i prepare only for my videos. anyway, the reason i had to prepare these was due to the tamil new year. one of my tamil friends had organized feast for a tamil new year and she requested me if i can make any south indian deep-fried snack. i was very much to contribute, but i wasn’t sure about which vada to make. moreover, i wanted something which i have not posted till now so that i can make a video and post it. while i was browsing my blog, i realized i had not posted mixed dal vada and also matched the requirements. hence i thought of making this and share it as a video to all my readers.
furthermore, i would like to send some tips, suggestions and variations to make a perfect mix dal vada recipe. firstly, while grounding the soaked lentils, do not ground them to a fine paste. grind them to the coarse paste so that you find a mix of grounded and whole lentils while shaping. secondly, there isn’t any hard and fast rule to have a specific shape the vada’s has to be shaped. you can shape it as per your preference. but the generic shape typically used is a disc-shaped which is fairly easy to shape. lastly deep fry these vada’s in a small batch and do not overcrowd in a deep frying pan. also deep fry these in a low to medium flame so that it gets cooked evenly.
