peanut rice recipe | groundnut masala rice | lunch box recipe with detailed photo and video recipe. a tasty and flavoured rice based dish prepared with roasted peanut/groundnut and with other spice mix. it is an ideal lunch box recipe for both kids and adults and can be prepared easily in jiffy during those busy mornings. generally it is served by itself without any side, but also tastes great with plain raita, dal and also coconut based chutney recipes.
previously, i had shared the capsicum rice recipe which was a combination of masala/spice mix with veggies like capsicum and onions. the reason i am highlighting it because the peanut rice is loosely based out of it. i have almost used the same peanut masala or groundnut masala for this recipe with a subtle variation to it. i even thought of adding finely sliced onions to it but gave the idea at the last moment. the main reason was to make it no onion no garlic recipe. apparently, peanut rice is also served in couple of south indian temples as nivedyam and prasadam. therefore even i wanted to keep it authentic and without any variation to it.
the recipe is extremely simple without much complicated steps, yet some tips, recommendations and serving ideas for peanut rice recipe. firstly, i would heavily recommend to use dry cooked rice without any moisture for this recipe. ideally, leftover cooked rice is optimal, but you can use freshly cooked rice by cooling it down. secondly, you can prepare the spice masala mix well ahead and use it to mix it with rice whenever you require. but make sure to store them in a cool dry place like in refrigerator. lastly, groundnut masala rice can be served as it is without any side but it tastes amazing with fried papadams and fryums.

Ingredients
for masala powder:
- 1 tsp oil
- 2 tbsp peanuts, roasted
- 1 tsp urad dal
- 1 tsp chana dal
- ½ tsp cumin / jeera
- 1 tsp sesame / til
- 3 dried kashmiri red chilli
- 2 tbsp coconut, grated
other ingredients:
- 2 tsp oil
- 1 tsp mustard / rai
- few curry leaves
- 2 tbsp peanuts
- 2 cup cooked rice
- ½ tsp salt
Instructions
- firstly, in pan heat 1 tsp oil and roast 2 tbsp peanuts, 1 tsp urad dal, 1 tsp chana dal, ½ tsp cumin, 1 tsp sesame and 3 dried red chilli.
- roast on low flame till the spices turn aromatic.
- now add 2 tbsp coconut and roast for a minute.
- cool the spices completely, and blend to fine powder without adding any water. keep aside.
- now in a large kadai heat 2 tsp oil and splutter 1 tsp mustard, few curry leaves.
- also saute 2 tbsp peanuts till they turn crunchy.
- now add 2 cups of cooked rice along with prepared masala powder and ½ tsp salt.
- mix well without breaking rice grains.
- cover and simmer for 5 minutes or till rice absorbs flavour completely.
- finally, serve peanut rice with raita or pack in your lunch box.

- firstly, use leftover rice for more flavour as it absorbs masala.
- also, add cashews along with peanuts to make rice more tasty.
- additionally, prepare masala powder before in hand and can kist prepare rice when required.
- finally, peanut rice taste great when prepared slightly spicy.

I would add more peanuts next time. Their flavour was pretty mild..
can we store peanut masala in fridge. if yes then for how many days.
saves good for months if using dry coconut.
