Pulao or flavoured rice recipes are perhaps one of the favourites and popular Indian lunch box recipes. It is generally prepared with a combination of rice and vegetables where an individual vegetable or herb is treated as a hero ingredient. One such simple and tasty pulao loaded capsicum flavour is capsicum aloo rice bath prepared in cooker for lunch boxes or breakfast.

I have posted several pulao or flavoured rice recipes, yet I get a lot of requests for some tasty and interesting pulao recipes. I have posted several flavoured vegetable rice recipes, but this has to be one of the loaded pulao recipes. Basically, this recipe is capsicum and potato vegetable flavoured pulao but contains herbs, coconut grate, garlic and ginger. With all these combinations, it makes one of the flavoured pulao recipes. Moreover, it is prepared in a pressure cooker which makes it even easier to prepare. Basically, all the vegetables, rice and masala are added to the pressure cooker and the pulao is prepared in 2 whistles. I generally make this for my husband’s lunch box recipes which can also be used for lunch and dinner. Try this recipe once and let me know your thoughts.

Capsicum Rice Recipe Furthermore, some more additional tips, suggestions and variants to the capsicum rice bath recipe. Firstly, I have prepared this rice pulao recipe with sona masuri which is the perfect choice for this pulao. However, you may also try this recipe with basmati rice or any long grain rice and it should taste equally good. Secondly, the flavoured bath is always served with a choice of spicy coconut chutney and curd raita, but that is not mandatory. Perhaps, you can also serve it with any spicy curry, rasam, dal or even sambar. Lastly, the rice and water proportion used for this recipe are specific to sona masuri rice. If you are planning to use basmati, you may have to reduce the water quantity by a 1:2 ratio.

Ingredients
  

for masala:

  • 2 tsp oil
  • 5 clove garlic
  • 3 inch ginger
  • 1 tsp coriander seeds
  • ½ tsp cumin
  • 1 tsp pepper
  • ½ inch cinnamon
  • 3 pods cardamom
  • 4 cloves
  • 5 dried red chilli
  • 2 tbsp coconut, grated
  • ½ cup water, for grinding

for bath in cooker:

  • 2 tbsp ghee
  • 1 tsp cumin
  • 1 inch cinnamon
  • 1 bay leaf
  • few curry leaves
  • pinch hing
  • 1 onion, sliced
  • 1 tomato, chopped
  • 3 tbsp mint, chopped
  • 2 potato, chopped
  • 1 capsicum, chopped
  • 2 tbsp peas
  • ¼ tsp turmeric
  • 1 tsp salt
  • 2 tbsp curd
  • 3 cup water
  • sona masuri rice, soaked
  • ½ lemon
  • 2 tbsp coriander, chopped

Instructions
 

  • firstly, to prepare the masala paste, in a pan heat 2 tsp oil and roast 5 clove garlic, 3 inch ginger to a golden brown.
  • add 1 tsp coriander seeds, ½ tsp cumin, 1 tsp pepper, ½ inch cinnamon, 3 pods cardamom, 4 cloves and 5 dried red chilli.
  • roast on low flame until the spices turn aromatic.
  • now add 2 tbsp coconut and saute until it turns slightly golden brown.
  • cool completley, and transfer to a mixer jar.
  • grind to smooth paste adding ½ cup water. masala paste is ready, keep it aside.
  • take a large cooker and heat 2 tbsp ghee.
  • add 1 tsp cumin, 1 inch cinnamon, 1 bay leaf, few curry leaves, and pinch hing.
  • saute until the spices turn aromatic.
  • also, add 1 onion and saute until the onions soften slightly.
  • further add 1 tomato, 3 tbsp mint, and saute until tomatoes turn soft and mushy.
  • now add 2 potato, 1 capsicum, 2 tbsp peas, ¼ tsp turmeric, and 1 tsp salt.
  • saute for a minute or until it turns aromatic.
  • add prepared masala paste, 2 tbsp curd and saute until the oil separates.
  • further, add 3 cup water and get to a boil.
  • add 1½ sona masuri rice, ½ lemon and 2 tbsp coriander. mix well.
  • once the water comes to a boil, cover and pressure cook for 2 whistles.
  • finally, enjoy Capsicum Aloo Rice Bath with raita and coconut chutney.
