my first encounter with student biryani was really interesting. it was my first trip to sydney from melbourne. my husband took me to this place in sydney which is famous for its student biryani recipes. initially i was very skeptical and more importantly the name itself was intrigue. but after i had my first bite of veg student biryani, i was already a big fan of this recipe. more importantly, i liked this biryani recipe because of the simplicity and no-frills procedure.
furthermore, the history of student biryani is very interesting. initially the student biryani as a concept was introduced by haji sahib. the name “student” was attached to biryani, just to attract the local students from the surrounding schools and colleges. however, today with word of mouth, student biryani has become a popular biryani recipe all over the world. especially, student biryani has become a popular dish with young generations and teenagers.

Ingredients
to cook rice:
- 1½ cup basmati rice, washed & soaked 30 minutes
- 6 cups water
- 1 star anise
- 7 cloves
- 1 inch cinnamon stick / dalchini
- 1 bay leaf / tej patta
- 2 cardamom / elaichi
- 1 tsp black pepper
- 1 tsp oil
- salt to taste
for biryani:
- 4 tbsp oil / ghee
- 1 onion, finely chopped
- 1 tsp ginger-garlic paste
- 5 mushrooms, chopped
- 6 cauliflower / gobi, florets
- 1 potato, cubed
- 1 to mato, finely chopped
- 8 broccoli, florets
- ½ tsp turmeric powder / haldi
- 1 tsp kashmiri chilli powder
- ¾ tsp coriander powder
- 1½ tsp biryani masala
- salt to taste
- 1 cup water
- ½ cup curd / yogurt
- fistful mint / pudina
- fistful coriander leaves, chopped
- ¼ cup fried onion
Instructions
rice cooking recipe:
- firstly, in a vessel take water along with spices, salt, oil and basmati rice.
- cook the rice grains for approximately 10 minutes.
- further drain the rice and rinse with water.
student biryani recipe:
- firstly, in a large kadai take oil / ghee.
- further saute onions, ginger-garlic paste.
- add vegetables of your choice and saute.
- furthermore, add turmeric, chilli powder, coriander powder and salt.
- add water and curd. mix well.
- also add biryani masala.
- add broccoli and tomatoes.
- furthermore, cover and cook for 15 minutes.
- now take a cup of masala stock and keep aside.
- layer mint, cooked rice, reserved masala stock.
- also layer with mint, coriander leaves and fried onions.
- finally, cover and cook for 20 minutes and serve.
how to make student biryani recipe | veg biryani with step by step photo recipe:
rice cooking recipe:
- firstly, in a deep bottomed vessel take enough water (around 6 cups)
- also add spices ( star, cloves, cinnamon, bay leaf, cardamom, black pepper)
- further to the water add salt and oil. oil helps to make rice non sticky.
- get the water to boil before adding soaked basmati rice. wash and soak the rice for 30 minutes.
- cook the rice grains for approximately 10 minutes or till they are 75% cooked.
- further drain the rice into a colander separating the rice and water.
- also rinse the rice grain with cold water. this helps rice to cool completely and further stop the cooking process.
- finally, keep aside till all the water from rice has been separated.
student biryani recipe:
- firstly, in a large kadai take oil / ghee.
- further saute onions till they turn golden brown.
- also add ginger-garlic paste and saute till the raw smell disappears.
- now add vegetables of your choice like carrot, cauliflower, potato and mushrooms.
- saute them for couple of minutes.
- furthermore, add turmeric, chilli powder, coriander powder and salt. saute on medium flame.
- add 1 cup of water and half cup of curd.
- further, give a good mix, making sure curd doesn’t curdles.
- also add biryani masala. i forgot to add along with other spices in step 6. so adding it now.
- add broccoli and tomatoes. give a good stir.
- furthermore, cover and cook for 15 minutes or till all vegetables are almost cooked.
- now take a cup of masala stock and keep aside. we will reuse it later.
- also add mint leaves.
- further, spread the cooked rice uniformly.
- then pour the reserved masala stock randomly.
- also layer with mint and coriander leaves.
- lastly layer with some fried onions.
- cover and cook on low flame for 20 minutes.
- finally, serve students biryani with raita.
notes:
- firstly, add vegetables of your choice like beans, peas etc.
- furthermore, do not over cook vegetables as we will be cooking more after layering with rice.
- also top with generous amount of ghee at the end to make it more flavourful.
- in addition, you can also add dry fruits like cashew and raisins.
- finally, biryani taste great when served next day by absorbing all spices.
