Mexican Rice Recipe | How to make Restaurant Style Authentic Mexican Rice with detailed photo and video recipe. Flavored and healthy rice-based side dish recipe prepared with tomatoes and vegetable stock. It is a popular dish in Mexico and Spain but in India, it is mainly served for mains and as a lunch box recipe. The rice is very similar to our vegetable pulao recipe and tastes good when served with raita or spicy curry.

Indian cuisine deals with several dishes prepared from cooked and uncooked rice for lunch and dinner. But at the same time, Indian cuisine has been exposed to many other cuisines and embraced its dishes accordingly. Mexican rice is one such flavored recipe that is prepared with vegetables and served for lunch or dinner.

I have posted several rice and pulao-based recipes on my website till now but Mexican rice recipe is very unique compared to all. The distinguishable unique characteristic of this rice recipe is the usage of broth or vegetable stock. Traditionally the dish is cooked in a chicken stock with a choice of meat. But I have used all the vegetarian alternatives to suit and meet all my vegetarian readers. In addition, the recipe inherits the Mexican way of cooking and hence it uses tomato or tomato puree. Honestly, it makes the entire recipe much easier and faster to prepare it. Furthermore, the recipe is incomplete without the jalapeno pepper but can be adjusted with the choice of any capsicum or bell pepper.

Mexican Rice Recipe

As previously mentioned, Mexican rice recipes are very easy to prepare, yet some tips and suggestions for it. Firstly, in this recipe, I have used basmati rice which adds the necessary flavour and aroma to the recipe. But it can also be replaced with Sona Masuri or even brown rice to make it healthier. Secondly, in terms of vegetables bell peppers and sweet corn are a must and cannot be ignored. Having said that you can experiment with it by adding any other choice of vegetables on top of it. Lastly, this recipe is prepared with vegetarian ingredients to meet the non-meat eater’s requirements. But if you are fine with meat, replace the veggie stock with chicken broth and also add boiled eggs while serving.

About Mexican Rice

A popular rice recipe made with a combination of mixed vegetables, rice, beans, and vegetable stock. Mexican rice most commonly known as Spanish Rice is a mild-flavored side dish from Mexican cuisine. But this recipe is an extension to it with a hint and taste inspired to the Indian taste buds. Ingredients
  

  • 1 tbsp butter
  • 2 tsp oil
  • 5 clove garlic, finely chopped
  • ½ onion, chopped
  • ½ cup tomato puree
  • 1 cup basmati rice, soaked 20 mins
  • ½ capsicum, cubed
  • 3 tbsp peas
  • 3 tbsp sweet corn
  • 3 tbsp boiled rajma / kidney beans
  • 1 tsp salt
  • ½ tsp cumin powder
  • ¾ tsp chilli powder
  • ¼ tsp pepper powder
  • 1 tsp mixed herbs
  • ½ tsp chilli flakes
  • 2 tsp tomato sauce
  • cup water

Instructions
 

  • Firstly, in a kadai heat 1 tbsp butter, and 2 tsp oil. Saute 5 clove garlic until it turns aromatic.
  • Add ½ onion and saute until the onion softens slightly.
  • Now add ½ cup tomato puree and cook until the tomato puree thickens.
  • Further, add 1 cup basmati rice and saute gently without breaking the rice grains.
  • Also add ½ capsicum, 3 tbsp peas, 3 tbsp sweet corn, 3 tbsp boiled rajma and 1 tsp salt.
  • Saute until the vegetables turn crunchy.
  • Add in ½ tsp cumin powder, ¾ tsp chilli powder, ¼ tsp pepper powder, 1 tsp mixed herbs, ½ tsp chilli flakes and 2 tsp tomato sauce.
  • Saute on low flame until the spices turn aromatic.
  • Further, add 1½ cup water and mix gently.
  • Cover and cook on low flame for 20 minutes or until the rice is cooked well.
  • Fluff the rice gently, cover and rest for 10 minutes.
  • Finally, enjoy Mexican Rice Recipe with salsa.
