paneer masala recipe dhaba style | dhaba style paneer curry | paneer gravy with step by step photo and video recipe. gravy based recipe has always been one of the popular and high demand curries for most of us. especially the dhaba way of preparing these curries are super popular due to its rich and creamy taste offering. dhaba style does not offer fancy curries, but a simple paneer masala recipe is prepared in a thick creamy curd to make it super tasty and mouth-watering.

i have posted quite a few paneer gravy recipes, but i keep getting this email to show some unique and exotic way to prepare a paneer curry. moreover, i keep getting this complaint that most of my curries are similar with no many changes. well, to be honest, there aren’t any significant differences but dhaba style preparation has always been unique. perhaps due to the setup of dhaba, the ingredients and the cooking way is significantly different. for instance, yoghurt is heavily used in dhaba style. basically, it is added to these curries to get that thickness, creaminess and also hint of tanginess. some even add chickpea flour or besan with curd, but i feel it would lower the spice heat and hence skipped it. in addition, i have also added the kadai masala which would add the extra zing to this gravy.

furthermore, i would also like to add some additional tips, suggestions and variations to the dhaba style paneer curry. firstly, the masala gravy or the curry base is all-purpose and you may use it for any other vegetable mix or even for meat. as matter of fact, you may extend this gravy by adding a choice of veggies to make it interesting. secondly, the addition of kadai masala is only to add the extra spice kick and is not mandatory. you may prepare this with just garam masala and chilli powder for a quick paneer curry. lastly, the dhaba style cooking is very generous with the oil or ghee used to prepare the curry base. hence, do not compromise on it to get the real flavour and taste like dhaba.

Ingredients
  

for dhaba masala:

  • 2 tsp coriander seeds
  • 1 tsp cumin
  • ¼ tsp pepper
  • 3 cloves
  • 2 pods cardamom
  • ½ inch cinnamon
  • ½ tsp fennel / saunf

for marination:

for curry:

  • 2 tbsp ghee / clarified butter
  • 2 tbsp oil
  • 1 bay leaf
  • 2 pods cardamom
  • 1 inch cinnamon
  • 2 cloves
  • 1 tsp cumin
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric
  • 1 tsp chilli powder
  • ¾ tsp salt
  • 2 tomato, finely chopped
  • ½ cup curd, whisked
  • ½ cup water
  • 1 tsp kasuri methi, crushed
  • ¼ tsp garam masala
  • 2 tbsp coriander, finely chopped

Instructions
 

how to marinate and fry the paneer:

  • firstly, in a large bowl take 20 cubes paneer.
  • also add ½ tsp chilli powder, ¼ tsp turmeric, ¼ tsp garam masala, 1 tsp ginger garlic paste, ¼ tsp salt.
  • mix well and marinate for 30 minutes.
  • now heat 1 tbsp ghee and marinated paneer.
  • fry for a minute making sure all the sides are cooked well. keep aside.

how to make dhaba style spice powder:

  • firstly, in a heavy-bottomed pan take 2 tsp coriander seeds, 1 tsp cumin, ¼ tsp pepper, 3 cloves, 2 pods cardamom, ½ inch cinnamon and ½ tsp fennel.
  • dry roast on low flame until the spices turn aromatic.
  • cool completely, and blend to a fine powder. keep aside.

how to make dhaba style paneer masala curry:

  • firstly, in a large kadai heat 2 tbsp ghee and 2 tbsp oil.
  • add 1 bay leaf, 2 pods cardamom, 1 inch cinnamon, 2 cloves and 1 tsp cumin.
  • saute until the spices turn aromatic.
  • now add 1 onion and 1 tsp ginger garlic paste. saute until the onions turn golden brown.
  • further keeping the flame on low, add the prepared spice powder, ¼ tsp turmeric, 1 tsp chilli powder and ¾ tsp salt.
  • saute on low flame until the spices turn aromatic.
  • now add 2 tomato and saute until tomatoes turn soft and mushy.
  • further, keeping the flame on low add ½ cup curd.
  • stir continuously until the curd is combined well and oil separates out from the mixture.
  • add ½ cup water or as required adjusting the consistency.
  • now add fried paneer and mix well.
  • cover and simmer for 5 minutes or until the flavours are absorbed well.
  • add 1 tsp kasuri methi, ¼ tsp garam masala and 2 tbsp coriander. mix well.
  • finally, enjoy paneer masala recipe dhaba style with roti, naan or phulka.

  • firstly, make sure not to burn the spices and roast on low flame.
  • also, adding ghee will enhance the flavour of curry.
  • additionally, you can also add cream or cashew paste to make the curry rich.
