as i mentioned previously kuska biryani recipe is mainly originated from the south indian cuisine especially in hyderabad and tamilnadu. it is particularly prepared with south indian muslim community during any festival celebration or for any occasions. in urdu kuska literally means plain or simple and hence the name to this biryani recipe. moreover, in tamilnadu, kuska rice or kuska biryani is generally served only in the canteen or in a mess and you may not find it in posh fine dine restaurants. perhaps because of the characteristics of this biryani which is without any meat or any veggies or because it is less fancy? anyway, i personally love it and i prepare it quite often whenever i have a strong urge for biryani and i do not have many veggies or i do not have much time.

furthermore, i would like to add few tips, recommendations for an authentic kuska recipe or kuska rice. initially, i have used basmati rice for the visual appeal but it can also be prepared with sona masuri to raw ponni rice too. typically it is prepared with raw rice served in canteen or mess. secondly, i have not added any food colour while preparing it. but generally red or orange food colour is added served in hotels or restaurants and you may add it if you wish too. lastly, i have added curd plus water combination in this recipe while cooking in pressure cooker. alternatively, you can add coconut milk plus water for the extra flavour. generally, it is served for lunch or dinner with a choice of curry and rotis.

Ingredients
  

  • 2 tbsp ghee / clarified butter
  • 1 bay leaf / tej patta
  • 1 inch cinnamon / dalchini
  • 3 pods cardamom / elachi
  • 1 star anise
  • 5 cloves / lavang
  • ½ tsp fennel / saunf
  • 1 tsp cumin / jeera
  • 1 onion, finely chopped
  • ¼ cup curd / yoghurt, whisk
  • 1 tsp ginger garlic paste
  • 1 green chilli, slit
  • ¼ tsp turmeric / haldi
  • 1 tomato, finely chopped
  • ½ tsp kashmiri red chilli powder
  • 1 tsp biryani masala
  • 1 tsp salt
  • 2 tbsp mint / pudina, finely chopped
  • 2 tbsp coriander, finely chopped
  • 1 cup basmati rice, soaked 20 minutes
  • 2 cup water

Instructions
 

  • firstly, in a pressure cooker heat 2 tbsp ghee and saute spices.
  • also saute 1 onion followed by 1 tsp ginger garlic paste and 1 green chilli.
  • additionally add 1 tomato and saute till the tomatoes turn soft and mushy.
  • further keeping the flame on low, add ¼ cup whisked curd and saute till the curd combines well without curdling.
  • now add ¼ tsp turmeric, ½ tsp chilli powder, 1 tsp biryani masala and 1 tsp salt. saute on low flame till it turns aromatic.
  • additionally, add 2 tbsp mint and 2 tbsp coriander. mix well.
  • furthermore, add 1 cup basmati rice and 2 cup water. mix well.
  • cover and pressure cook for 2 whistles on medium flame or till rice gets cooked completely.
  • finally, serve kuska rice / kuska biryani with mirchi ka salan or raita.

notes:

  • firstly, adding curd enhances the flavour of biryani, however, can be replaced with coconut milk.
  • also, use sona masuri rice if you do not have basmati rice.
  • additionally, if cooking biryani in open vessel, then cover and simmer for 20 minutes.
  • finally, kuska rice / kuska biryani recipe tastes great when prepared with lots of spices.
