aate ka halwa recipe | atta halwa recipe | atte ka sheera with detailed photo and video recipe. a popular north indian dessert recipe prepared mainly with wheat flour, ghee and sugar. it is rich and contains an equal amount of sugar and ghee and hence it is typically prepared for festivals and occasions. the recipe has a strong resemblance to the khara prasad or kada prasad offered in punjabi gurudwara langars but is quite different.
halwa recipes are very common in indian cuisine and there are many varieties of halwa prepared with different ingredients like corn flour, semolina and vegetables. with respect to wheat flour, there are 2 types of halwa. this recipe version of atta halwa recipe belongs to the north indian cuisine or particularly to the punjabi cuisine served in gurdwara’s langars. however down in south we have a totally different type of wheat halwa with translucent texture. it looks very similar to corn flour halwa in texture and thickness. i have not shared the recipe yet but i am planning to share it soon.
furthermore, some important tips and recommendations while preparing the aate ka halwa recipe. firstly, the roasting of wheat flour or atta with ghee is very critical. ensure it properly mixed and roasted in a low to medium heat. otherwise, you may get raw smell if under roasted or burnt smell if over roasted. secondly, i have added an equal amount of sugar and ghee to this recipe as followed in the traditional recipe. if it does not match your preference then you can easily lower it as per your taste. lastly, i have added cardamom powder at the end of the recipe for the nice aroma. you can easily extend it by adding dry fruits and raisins.

Ingredients
- 1 cup ghee / clarified butter
- 1 cup wheat flour / atta
- ¼ tsp cardamom powder / ealchi powder
- 1 cup sugar
- 3 cup water
Instructions
- firstly, in a large kadai heat 1 cup ghee.
- add in 1 cup wheat flour and mix well without forming any lumps.
- roast on low to medium flame stirring continuously.
- after 14 minutes, the mixture will start to turn golden and aromatic.
- slowly after 20 minutes, the mixture will turn dark golden brown indicating wheat flour has cooked completely. keep aside.
- now in a saucepan take 1 cup sugar and 3 cup water.
- stir well-dissolving sugar and boil for 2 minutes. no need to get thread consistency sugar syrup.
- pour the hot boiling sugar syrup over wheat mixture stirring continuously.
- be careful as the mixture will splutter.
- keep stirring continuously, till the wheat flour will absorb all the water.
- continue to cook for 5 minutes stirring continuously without forming lumps.
- now add ¼ tsp cardamom powder and mix well.
- finally, serve atte ka halwa or kada prashad hot or warm.
how to make atta halwa recipe with step by step photo:

- continue to stir and do not allow to burn the mixture.
- slowly after 20 minutes, the mixture will turn dark golden brown indicating wheat flour has cooked completely. keep aside.

notes:
- firstly, do not alter the ratio of ghee, wheat flour, sugar and water (1:1:1:3) as it helps to give a nice texture.
- also, roast the wheat flour on low to medium flame to prevent from browning.
- additionally, to get nice texture use coarsely ground wheat flour, however fine atta also works great.
- finally, atte ka halwa or kada prashad taste great when eaten a tbsp amount as it is very heavy.
