there are several ways the dudhi halwa recipe can be prepared and it basically varies with the location or region. however 2 main variation of this recipe is by preparing it either with milk or condensed milk / milkmaid. note that if you are using the thick condensed milk, no extra sugar is require to be added as condensed milk already contains. but in this recipe i have followed the traditional way of preparing it via fresh cream milk and khoya. in addition the advantage with milk is the amount sugar can be easily controlled as compared to the condensed milk. moreover i personally feel the grated bottle gourd slices gets cooked properly with milk yielding more creamy and rich lauki ka halwa. this is because, milk takes more time to get thick and eventually helping bottle gourd slices to cook properly.

moreover the recipe for dudhi ka halwa recipe is absolutely simple and any amateur cook can easily try without much hassle. some important and critical tips for a perfect layered lauki ka halwa recipe. firstly, grate the bottle gourd only at the sides and do not use the center part of it. secondly, you can also add mawa or khoya after the milk starts thickening. adding mawa helps to make it more creamy and juicy. lastly, do not forget to stir continuously while the grated bottle gourd are cooking with milk. otherwise it may stick to bottom with change in colour to the loki ka halwa.

Ingredients
  

  • 600 grams lauki / bottle gourd / doodhi / ghiya
  • ¼ cup ghee / clarified butter
  • 5 cashew / kaju, halved
  • 5 badam / almond, chopped
  • 2 tbsp raisins / kishmish
  • ½ cup milk
  • ¾ cup sugar

for khoya:

Instructions
 

  • firstly, heat ¼ cup ghee and roast 5 cashew, 5 badam and 2 tbsp raisins.
  • roast the nuts to golden brown and keep aside.
  • now add in grated lauki and saute for 5 minutes.
  • saute till the lauki shrinks slightly and changes colour.
  • add in ½ cup milk and mix well.
  • cook for 10 minutes or till milk thickens and lauki gets cooked completely.
  • further add in ¾ cup sugar and mix well.
  • sugar melts and boil for 5 minutes or till it thickens.
  • add in khoya into lauki mixture and mix well.
  • keep stirring till the mixture thickens and forms a mass.
  • add in roasted nuts and ¼ tsp cardamom powder. mix well.
  • finally, transfer dudhi halwa / lauki halwa to a bowl and serve hot or chilled.

  1. firstly, peel the skin of lauki and grate leaving behind the seed.

  2. now in a large kadai heat ¼ cup ghee and roast 5 cashew, 5 badam and 2 tbsp raisins.

  3. roast the nuts to golden brown and keep aside.

  4. now add in grated lauki and saute for 5 minutes.

  5. saute till the lauki shrinks slightly and changes colour.

  6. add in ½ cup milk and mix well.

  10. meanwhile prepare khoya by heating 1 tsp ghee and ¼ cup milk.

  12. break the lumps and mix till the mixture separates from the pan.

  13. keep stirring till the mixture separates from the pan and instant khoya is ready.

  14. add in prepared instant khoya into lauki mixture.

  15. mix well breaking the khoya and combines well with lauki mixture.

notes:

  • firstly, grate the lauki leaving behind the seeds. else dudhi halwa doesn’t taste good.
  • also, to reduce the cooking time, add condensed milk instead of sugar.
  • additionally, keep stirring lauki halwa and cook on le to medium flame else there are chances to burn from bottom.
  • finally, dudhi halwa or lauki ka halwa taste great when prepared with ghee and served hot.
