well, to be honest, i am not a huge fan of kebab recipe. even though this recipe made with vegetable, without any meat addition. but i feel kebab is a meat-based recipe and i have to avoid it. having said that, my husband like such kind of deep-fried or pan-fried snack and hence i try these once in a while. my personal favourite is vegetable-based cutlet recipe compared to the kebab recipes. moreover, in this kebab recipe, i have added panko breadcrumbs which makes it a crispy and brittle kebab. traditional meat-based one are tender in texture, but at the same time, it holds the shape. whereas the veggie-based kebab may not hold its shape and hence breadcrumbs becomes one of the must ingredients.

furthermore, i would also like to highlight some of the tips, suggestions and variations to aloo ke kabab recipe. firstly, in this recipe, i have used the shallow fried technique to fry the potato-based kebab. while this is the recommended way of preparing this snack, you can also make it by pan fry for a more healthy option. secondly, i have used panko breadcrumbs to make this kebab a crispy one. you may use the other breadcrumbs for the same purpose but may not get the same result. lastly, i have shaped these kebab in a diamond shape so that it resembles the typical kebab recipe. but that is not mandatory and you can shape it to your desired shape.

Ingredients
  

  • 3 potato / aloo, boiled & mashed
  • ½ onion, finely chopped
  • 1 chilli, finely chopped
  • ½ tsp ginger paste
  • ½ tsp aamchur
  • ½ tsp chaat masala
  • ½ tsp pepper powder
  • ¼ tsp turmeric
  • ½ tsp garam masala
  • ½ tsp cumin powder
  • ¼ tsp kashmiri red chilli powder
  • 2 tbsp mint / pudina, finely chopped
  • 2 tbsp coriander, finely chopped
  • ¾ tsp salt
  • ¼ cup bread crumbs

other ingredients:

  • 2 tbsp cornflour
  • 2 tbsp maida / plain flour
  • ¼ tsp pepper powder
  • ½ tsp salt
  • ½ cup water
  • 1 cup panko bread crumbs, for coating

Instructions
 

  • firstly, in a large bowl take 3 potato, ½ onion, 1 chilli and ½ tsp ginger paste.
  • also add ½ tsp aamchur, ½ tsp chaat masala, ½ tsp pepper powder, ¼ tsp turmeric, ½ tsp garam masala, ½ tsp cumin powder and ¼ tsp chilli powder.
  • further add 2 tbsp mint, 2 tbsp coriander and ¾ tsp salt.
  • mix well making sure all the spices are well combined.
  • now add ¼ cup bread crumbs and mix well.
  • make sure a soft dough is formed. add more bread crumbs or cornflour if the mixture is loose.
  • now prepare the slurry by taking 2 tbsp cornflour, 2 tbsp maida, ¼ tsp pepper powder and ½ tsp salt.
  • add ½ cup water and prepare a smooth lump-free batter.
  • further pinch a small ball sized aloo kabab mixture and give a diamond shape or shape of your choice.
  • dip in slurry coating uniformly.
  • now roll in panko bread crumbs to have a crispy outer coating.
  • shallow fry in hot oil keeping the flame on medium.
  • flip over and fry on both sides until it turns golden brown.
  • drain off over kitchen paper to remove excess oil.
  • finally, enjoy aloo kabab recipe with tomato sauce or green chutney.
