halwa recipes are very common in my family and we generally make it for our annual celebration feast. one of the common halwa we end up making is kashi halwa or kushmand halwa made from grated ash gourd. basically, i am highlighting it in this recipe post, because the recipe steps are very similar compared to apple halwa. the recipe begins with grating the apple finely which is later crystallised and cooked in sugar syrup. some even add milk or khoya to make it creamy and juicy but i have skipped in this recipe. in addition, it is cooked with a generous amount of ghee which makes it a perfect flavoured indian dessert recipe. i personally like the combination of apple flavour with ghee and kesar in it. perhaps an ideal way to finish any leftover apple and serve it your guests.
the recipe for apple halwa is very simple and easy, without any complication, yet some tips and suggestions to it. firstly, i have grated the large apples using graters so that it comes out evenly and same shaped. but if you are cutting corners, you can use the food processor to mash it roughly. secondly, i personally recommend using the below-mentioned sugar quantity as it is ideal for this recipe. apple contains sufficient amount sugar quantity and hence requires less amount of added sugar as compared to other halwa recipes. lastly, the recipe taste’s great when served warm or hot. if you are planning to serve it later, make sure to microwave it for 1-2 minutes and serve it with finely chopped dry fruits.

Ingredients
- 4 apple
- 2 tbsp ghee / clarified butter
- 8 cashew, halves
- ¼ cup sugar, add more if required
- ¼ tsp saffron food colour
- 1 tsp vanilla extract
- ¼ tsp cinnamon powder
Instructions
- firstly, cut the apples and grate. you can alternatively blend to smooth paste.
- in a large kadai heat 2 tbsp ghee and roast 8 cashew.
- roast to golden brown on low flame, keep aside.
- add in grated apple and mix well.
- keep stirring until the juice from apple is released.
- continue to cook until the mixture thickens and softens.
- further, add ¼ cup sugar. you can increase the amount of sugar to your choice.
- also, add ¼ tsp saffron food colour and mix well.
- keep stirring and the sugar dissolves.
- cook on medium flame, until the halwa thickens.
- further, cook until the halwa separates from the pan.
- now add 1 tsp vanilla extract, ¼ tsp cinnamon powder and fried cashews. mix well.
- finally, enjoy apple halwa garnished with more cashew.

- also, skip adding saffron colour and still get bright colour by caramelising sugar.
- additionally, for a smooth halwa texture, blend the apples to smooth paste.
- finally, apple halwa recipe can be made richer by adding khova.
