palak pakora or spinach fritters is the first fritters recipe i learnt from my mom out of all indian deep fried recipes. i have improvised this recipe by adding chaat masala to the fritters batter. i love any palak recipes, as you can see i have posted palak paneer recipe, dal palak recipe and palak tambli recipe.

i understand that this recipe is a deep fried recipe, and i should not talk about health benefits. however, spinach or palak has a lot health benefits by itself. it helps or controls diabetics, and spinach is rich in antioxidants and prevents from cancer. apart from these benefits, it also lowers blood pressure and asthma problems.

Ingredients
  

  • 10 palak leaves
  • ½ cup besan / gram flour
  • ¼ tsp turmeric powder
  • ½ tsp chilli powder
  • ½ tsp ajwain / caraway seeds
  • ½ tsp chaat masala
  • salt to taste
  • 1 tbsp rice flour
  • pinch of baking soda, optional
  • water as required to prepare batter
  • oil for deep frying

Instructions
 

  • in a mixing bowl take half cup of besan, turmeric powder, chilli powder, ajwain, chaat masala, salt and rice flour. mix well.
  • now add a pinch of baking soda. it is optional. however, it makes your pakoda fluffy.
  • now add water slowly and make a smooth batter.
  • dip the whole palak leaves into batter. coat with batter on both side.
  • slowly drop into hot oil and deep fry. stir occasionally.
  • fry till they become crisp and golden brown.
  • remove the pakodas and drain onto a paper towel.
  • serve hot with tomato ketchup and masala chai.

notes:

  • increase the amount of chilli powder to make it more spicy.
  • frying on medium flame makes your palak pakoda crispy and tasty.
  • wash the palak leaves and cut off the steam. wipe with cloth and allow to dry before you use to prepare pakodas. else the water content present in palak makes oil to splutter.
  • adding rice flour makes pakodas crispy.
  • you can chop palak and mix with batter. then deep fry like onion pakodas making round balls.
