well, i wasn’t sure about the love and affection towards the custard-based dessert recipes. but last week i posted a creamy vermicelli custard recipe, which received a very good response both in facebook and youtube. hence i thought of posting another popular dessert recipe made with custard and bread slices. personally, if you give me an option, i will always choose the traditional fruit-based custard sweet. but there are many who like the custard recipes in a pudding way. i guess the smooth and delicate texture with the wobbly nature attracts everyone, especially the kids. moreover the best part of this recipe, it does not require egg and can be made with steam so no oven required.
anyway, before i wrap it up, some more tips, suggestions and variations to custard bread pudding recipe. firstly, you may need to use full cream thick milk with fine quality of custard powder to get the proper texture. with skim milk, it may not set like a cake and perhaps dissolve once it is removed from a container. secondly, to get the caramel texture, i have used the most common ingredient, that is sugar. you may use other options like brown sugar, jaggery to make it healthier. but you may not get the same texture and taste. lastly, the slices of the pudding are served as it is but tastes great when topped with dry fruits or with chocolate sauce.

Ingredients
for sugar caramel:
- ¼ cup sugar
!for custard mixture:
- 3 slice bread, white or brown
- 2 cup milk
- ¼ cup sugar
- ¼ cup custard powder, vanilla flavoured
Instructions
- firstly, in a pan take ¼ cup sugar and heat on low to medium flame.
- stir in between until sugar melts completely.
- continue to heat on low to medium flame until the sugar turns golden brown. this stage of sugar is called caramelized sugar.
- pour the caramelized sugar into a small bowl and swirl slightly to coat the wall of the bowl. keep aside.
- now take 3 bread slices, and trim off the sides.
- pulse into crumbs using a mixi. make sure to pulse and blend and not make a paste. keep aside.
- in a large bowl, take 2 cup milk, ¼ cup sugar and ¼ cup custard powder.
- whisk and mix well until everything is well combined. make sure there are no lumps.
- transfer the milk mixture into a large kadai and cook on medium flame until the milk thickens.
- now add in crumbled bread and mix well.
- continue to cook until the mixture turns super creamy and thick.
- pour the mixture into the bowl of caramelised sugar.
- place in the steamer for 30 minutes.
- cool completely and refrigerate for 1 hour or until it sets completely.
- finally, unmould and enjoy caramel bread pudding.
