Pulao or flavoured Indian rice recipes is perhaps one of the favourite rice recipes for many. Typically, it is prepared with one hero ingredient which can be vegetable or meat with other supporting ingredients in an open vessel. However, it can also be prepared in an instant way, particularly in a cooker or also known as an Indian instant pot for quick turnaround.

As I was explaining, the typical pulao recipes are prepared with one main hero ingredient. It is mixed with other supporting ingredients like spices and herbs which makes it an exciting rice recipe. More importantly, it is cooked either by preparing the rice separately and mixing it with spices or by the rice and pulao ingredients cooked together in an open vessel. There is no problem with this, but it can take considerably longer time to cook rice, vegetables or any other ingredients. This can be an issue for working or busy couples, especially if you need something quickly in the morning. To solve this issue, I have come up with the most effective way, without any new ingredient or vessel and i.e Cooker Veg Pulao Recipe. Basically, I am using the pressure cooker to quickly prepare the pulao rice in under 10 mins. Do try this way and I am pretty sure, you would like this new method.

Cooker Pulao Recipe Furthermore, some more additional and important tips, suggestions and variants to the cooker pulao recipe. Firstly, I would strongly recommend following the exact quantities of the ingredients mentioned in the recipe video. This is mainly due to the fact, we are a pressure cooker and any change in the ratio may impact the end result. Secondly, avoid using short-grain rice like sona masuri, samba jeera rice and use long-grain rice like basmati. When cooked with basmati, the pulao would turn more appealing and attractive. Lastly, I prepared this pulao as a veg pulao by adding basic vegetables to it. However, you can also cook this with a choice of meat, paneer or a combination of all the above. However, try to keep the ratio intact with the rice so that it does not turn mushy or dry.

Ingredients
  

for masala paste:

  • ½ cup mint / pudina
  • ½ cup coriander
  • 5 cloves garlic
  • 2 inch ginger
  • 2 chilli
  • ½ tsp cloves
  • 2 inch cinnamon
  • 4 pod cardamom
  • ½ tsp pepper

for pulao:

  • 2 tbsp ghee
  • 2 bay leaf
  • 1 tsp cumin
  • 2 onion, sliced
  • 1 carrot, chopped
  • 1 potato, chopped
  • 3 tbsp peas
  • 10 beans, chopped
  • ½ capsicum, chopped
  • ½ tsp salt
  • 3 cup water
  • cup basmati rice, soaked 20 minutes
  • 1 tsp salt
  • ½ lemon

for roasting:

  • 2 tsp ghee
  • 8 cube paneer
  • 2 tbsp cashew

Instructions
 

  • firstly, to prepare the masala paste, in a mixer jar take ½ cup mint, ½ cup coriander, 5 cloves garlic, 2 inch ginger, and 2 chilli.
  • also add ½ tsp cloves, 2 inch cinnamon, 4 pods cardamom, and ½ tsp pepper.
  • grind to smooth paste adding water as required. keep aside.
  • in a cooker, heat 2 tbsp ghee. add 2 bay leaf, and 1 tsp cumin and saute until the spices turn aromatic.
  • further, add 2 onion and saute slightly until the onion shrinks.
  • also add 1 carrot, 1 potato, 3 tbsp peas, 10 beans, ½ capsicum, and ½ tsp salt. saute for a minute.
  • add in the prepared masala paste and cook for 2 minutes.
  • pour in 3 cup water and get to a boil.
  • once the water comes to a boil, add 1½ cup basmati rice (soaked for 20 minutes).
  • also, add 1 tsp salt and ½ lemon. mix well.
  • cover and pressure cook for 2 whistles or until the rice is cooked well.
  • now in a pan heat 2 tsp ghee. roast 8 cube paneer and 2 tbsp cashew.
  • roast until the cashew turns crunchy and paneer turns golden brown.
  • finally, add fried paneer and cashew over cooker pulao and mix gently.

  • firstly, add vegetables of your choice to make them nutritious.
  • also, make sure to soak the rice for 20 minutes, or else the rice will not be long grains.
  • additionally, if you do not have a pressure cooker, then you can cover and simmer for 20 minutes in kadai.
  • finally, cooker pulao recipe tastes great when served after 30 minutes.
