christmas is around the corner and i wanted to prepare some easy fruit based cake for this year christmas celebration. i had already shared the christmas cake or fruit cake last year and hence i wanted something easy and fruit flavoured cake recipe for this year. also i wanted to experiment with my cake recipe with yogurt as compared to my other previous cake recipe which were mostly condensed milk and vinegar. with this recipe of tutti frutti cake, i had to try twice before getting the desired result but i was totally convinced with my 3rd attempt. so this cake recipe is a tried and tested recipe if you have any doubts with yogurt and plain combination. also specifically in this recipe i have not used hand blender and used cut and fold method as i was getting several request for alternatives.
while the recipe for tutti frutti cake recipe is extremely without much complications, yet some easy tips and variations. firstly, if you do not wish to use curd / yogurt for any reason than you can replace it with milk or condensed milk with 1 tsp of vinegar. basically you should be good to use the same quantity as curd / yogurt. note that if you are using condensed milk, skip the sugar part. secondly, i have baked this cake in a bread loaf container. you should be good using a circular baking trays as well for this recipe. later it can be frosted with either chocolate or cream frosting. refer my chocolate cake or black forest cake for the same. lastly, you can add your desired fruits on top of tutti frutti, like kishmish sultanas, apricot, plum, choco chips, berries etc.

Ingredients
- ¾ cup 190 grams curd / yogurt
- ¾ cup 170 grams sugar
- 1 tsp vanilla extract
- ½ cup 100 grams oil
- 1½ cup 260 grams maida / plain flour / refined flour / all purpose flour
- ¼ tsp baking soda
- 1 tsp baking powder
- ¼ cup water
- ¼ cup 60 grams tutti frutti
Instructions
- firstly, in a large mixing bowl take ¾ cup curd, ¾ cup sugar, ½ cup oil and 1 tsp vanilla extract.
- mix well with the help of whisk.
- further sieve 1½ cup maida, ¼ tsp baking soda and 1 tsp baking powder.
- mix well using cut and fold method.
- further add ¼ cup water and mix well forming thick flowing consistency batter.
- add in ¼ cup of tutti frutti and give a good mix.
- further, transfer the cake batter into the cake mould or bread mould (width: 12 cm, height: 6 cm, length: 26 cm). make sure to grease the mould with butter to avoid sticking and line butter paper at bottom of tray.
- level up the batter and pat the tray twice to remove the air incorporated into the batter.
- place the cake tray into preheated oven. bake the cake at 180 degree celsius or 356 degree fahrenheit for 30-40 minutes.
- finally, serve the tutti frutti cake or store in airtight container.

- or bake till the toothpick inserted comes out clean.
- further, allow the cake to cool completely and later cut to slices and serve.
- finally, serve the tutti frutti cake or store in airtight container.
notes:
- firstly, instead of maida use wheat flour to prepare healthy cake.
- also, add dry fruits like dates, cashew, walnut to make more healthy and rich.
- furthermore, to bake in microwave convection mode pre heat and bake at 180 degrees for 40 minutes. and to bake in cooker check out how to bake in cooker.
- additionally, use butter in-place of oil if you are serving for kids.
- finally, tutti frutti cake stays good for a week when refrigerated.

Followed your recipe but instead of yogurt, I used cultured coconut as I do not eat dairy. Instead of Tutti-Frutti, I used cashews and fruit cocktail. 70% maida and 30% fine atta. The outcome was just beautiful, the texture was superb and the taste was so delicious, I finished half the cake in one go… he he!
I am searching for true vegan chocolate chips and will use them next time.
