in my hometown, ghee rice is popular rice recipe, especially in the konkani community. this is a must dish in their banquet for any big occasions. i have lot my friends from konkani community and whenever, they invite for a feast, i would never miss a chance to attend it. i should admit that, i developed the taste for ghee rice from such feasts. furthermore, i asked my mom to learn and prepare me for my lunch box. i usually like to enjoy my ghee rice hot with onion-tomato raita.
ghee rice is also known as nei choru in kerala. this is also termed as malabar special rice recipe and it is often served with non-veg curries in kerala. however, in some part of the malabar, it is also served with dal fry as well. i personally like this recipe with veg saagu which is topped with lots of cashews. furthermore,  i used to have hot steamed rice mixed with ghee and salt when i was kid. moreover, my mom used to always say, it was easy to feed me anything by adding a doloup of ghee over it.

Ingredients
- 1 tbsp ghee / clarified butter
- 1 cup basmati rice, cooked
- ¾ tsp jeera / cumin seeds
- 1 bay leaf / tej patta
- 2 cardamom / elachi
- 2 cloves
- 1 star anise
- 1 inch cinammon stick
- 15 black pepper, whole
- 15 cashews, whole / cut
- ¼ onion, thinly sliced
- 2 garlic cloves, finely chopped
- ½ inch ginger, finely chopped
- salt to taste
Instructions
- in wide pan, take a tbsp of ghee.
- once the ghee starts to melt, add jeera.
- also add spices like bay leaf, cardamom, cloves, star anise, cinammon stick and black pepper. saute till they turn aromatic.
- now add cashews and fry till they turn golden brown.
- once the cashews turn almost golden brown, add sliced onions, ginger and garlic. fry till the raw smell of ginger and garlic disappears.
- finally, add cooked rice and salt to taste.
- mix well without breaking rice grains. cook for a minute.
- serve ghee rice with raita, saagu or as it is.

- finally, add cooked rice and salt to taste.
- also mix well without breaking rice grains. cook for a minute.
- finally, serve ghee rice with raita, saagu or as it is.
notes:
- firstly, garnish with few coriander leaves for more flavour.
- also do not over cook the rice as it may turn sticky when you saute.
- alternatively, to have more flavour, cook the rice in ghee tempering with 1:2 water ratio.
- furthermore, ghee rice is best for kids lunch box.
- finally, add some raisins if you like slight sweet flavour in ghee rice.

In ghee rice or pulao sugar should be added but there is no touch of sugar.. without adding sugar it will be tasteless..
