well, to be honest, i am not a huge fan of baking a cookie recipe at home but i like to have it as a snack with my cup of coffee. i am big time addict of parle-g biscuits and i make sure to have it always refilled in my kitchen shelf. but lately, i have started exploring other variations of cookies and biscuits and oatmeal cookies are my new favourite one. i started liking this cookie because it is made from oats and i can have it for breakfast as a meal. also, i make these with brown sugar which makes it healthy and flavours too. it can also be made with jaggery but i would limit to brown sugar as of now.
in addition, some easy and must tips, variations & suggestions for a perfect oat cookies recipe. firstly, in this recipe post, i have used rolled oats which is ideal and recommended. having said you can also use other variants of oats like oat brain, steel cut oats and even scottish oats too. secondly, in this recipe, i have used brown sugar which can be easily replaced with white sugar or with jaggery. white sugar may not result with the brown coloured cookies, but otherwise, it does not have a major impact. lastly, once baked store these in an airtight container for better shelf life. further, you can blend these cookies with chilled milk to make oat cookie milkshake.

Ingredients
- ½ cup (110 gm) butter, softened
- ½ cup (60 gm) brown sugar
- 1 (100 gm) banana, sliced
- 1.5 cup (170 gm) rolled oats
- ¾ cup (110 gm) maida / plain flour
- ¼ tsp baking soda
- ¼ tsp cinnamon powder
- ¼ tsp salt
- 1 tsp vanilla extract
- ½ cup (80 gm) raisins / kishmish
- ¼ cup (50gm) choc bits
Instructions
- firstly, in a large mixing bowl take ½ cup butter.
- add ½ cup brown sugar and beat well. you can alternatively use white sugar in place of brown sugar.
- further, add 1 banana and beat again.
- now add 1.5 cup rolled oats and ¾ cup maida.
- also add ¼ tsp baking soda, ¼ tsp cinnamon powder, ¼ tsp salt and 1 tsp vanilla extract.
- mix well making sure the ingredients are combined well.
- furthermore, add ½ cup raisins and ¼ cup choc chips. mix well
- pinch a ball sized dough and roll evenly.
- place the cookie ball a baking tray lined with baking paper and flatten slightly.
- preheat and bake at 190 degree celsius for 10 minutes. alternatively to bake cookie in cooker refer my peanut butter cookie.
- the cookie will be soft initially. cool completely and the oatmeal cookie turns crisp and crunchy.
- finally, store the oat cookies in an airtight container and enjoy for a week.
